Fresh vegetables: broccoli, carrots, zucchini, peppers and onions.

- Prepare the vegetables: first, begin by chopping your vegetables into similar sized pieces.
- Fry the meat: secondly, fry the ground meat until cooked.
- Fry the veggies: once the meat is fully cooked, then fry your vegetables.
- Make the sauce: then, add all of the sauce ingredients together in a small bowl and whisk together.
- Assemble: afterwards, return the ground meat to the pan, pour over the sauce and mix to combine.
- Serve: finally, garnish with sesame seeds, green onions and homemade sriracha mayo.

Ground Beef Stir Fry with Spicy Mayo

- 1 tsp olive oil, for frying the beef
- 1 tsp sesame oil
- 1 lb ground beef
- 4 cups white rice, cooked
- 1 cup broccoli, chopped
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1/2 cup red onion, chopped
- green onions, to garnish
- sesame seeds , to garnish
Garlic Ginger Soy Sauce:
- 1/4 cup low sodium soy sauce
- 2 tbsp olive oil
- 2 tsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tsp sriracha, or another hot sauce
- 1 tbsp cornstarch + 1 tbsp water, mixed
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1 tsp brown sugar
- 1 tbsp sesame seeds
Spicy Mayo:
- 1/4 cup mayonnaise
- 1/4 cup sriracha, or another hot sauce
- splash of water
Instructions
- Prepare your vegetables: begin by chopping your broccoli, carrots, zucchini, bell pepper, and red onion into similar sized pieces. Set aside.
- Fry the beef: add 1 tsp of olive oil to a large frying pan or wok and set to medium/high heat. Add the ground beef and cook for 4-5 minutes, or until cooked. Using a slotted spoon, remove the ground beef from the pan and transfer to a bowl.
- Fry the vegetables: next, add 1 tsp of sesame oil to the same frying pan you used to fry the ground beef and set to medium heat. Add the vegetables and allow to sauté for 6-8 minutes, or until cooked to your liking.Sammy's tip: add a splash of water to the pan and cover with a lid. This will allow the steam to help cook the vegetables quicker.
- Prepare the garlic ginger soy sauce: add all of the ingredients together in a small bowl, and whisk well.
- Assemble: once the vegetables are cooked, return the ground beef back to the pan and pour over the garlic ginger soy sauce. Simmer on medium heat for 2-3 minutes, or until the sauce has slightly thickened and everything is mixed together well.
- Prepare the spicy mayo: mix together the mayonnaise and hot sauce. Add a small splash of water to slightly thin out the sauce, making it easier to drizzle over the assembled bowl.
- Serve: spoon the ground beef and vegetable mixture over your prepared rice, and finish with a drizzle of spicy mayo, sesame seeds and green onions.

To be honest, I was a little skeptical about this one. Put it all together and wasn’t sure… But once we all sat down and started eating it, this was an absolute favorite! 4 for 4!
This is one of my favorite meals I’ve made. It’s light and delicious. We went with chili crisp sauce with the kewpie mayo and it was spicy but so good. I highly recommend you make this one. It’s pretty quick too.
I make this frequently – sometimes I use pork instead of beef – but it’s always a hit!

This one is a winner in my book! I’ve made it twice so far. Husband cant handle ground beef so we substituted chicken one time and grass-fed beef stir-fry strips the second time. Both ways were delicious. My son requested it again the next time he comes home from college. Makes great leftovers too. I’ve added it to my recipe box. It’s a keeper!
