I first made this recipe about 15 years ago, and everyone loved it so much that it’s been a family staple ever since. My mom makes it, I make it, and my partner makes it from time to time too. It’s one of those reliable dinners we keep coming back to because it’s comforting and just so delicious. If you love jalapeño poppers, I have a feeling this one’s going to be a favourite.


Jalapeño Popper Chicken with Crispy Breadcrumbs
Equipment
- 1 cookie sheet
Ingredients
- 2 tbsp extra virgin olive oil, for brushing on the chicken
- 1 pound chicken cutlets , this will make 4 -5 chicken roll ups
- 1 cup cream cheese, room temperature
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup seasoned breadcrumbs
- 1 large jalapeño, finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- salt
- 1 lime (wedges), to finish
Instructions
- Preheat your oven to 400°F (200°C).
- Using a meat mallet, gently pound the chicken breasts until they are thin enough to roll. Season both sides lightly with salt and pepper.
- In a bowl, combine the cream cheese, cheddar cheese, seasonings, and chopped jalapeños. Mix until well combined.
- Divide the filling evenly between the chicken cutlets. Roll each one tightly and secure with toothpicks.
- Brush each chicken roll with extra virgin olive oil, then coat evenly in breadcrumbs.
- Place on a baking sheet and lightly spray or drizzle with olive oil or avocado oil.
- Bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Finish with a squeeze of lime over the chicken, serve warm, and enjoy.
