Have you ever heard of Chocolate Chow Mein Clusters? They’re one of the best no-bake desserts that sound too simple to be true, but they are true! Crunchy chow mein noodles coated in melted chocolate with toasted almonds is all it takes. They’re done in fifteen minutes and no oven time required.

These chocolate chow mein clusters are my go-to when someone asks me to bring a dessert last minute or when the family wants something sweet and I have no desire to do anything extensive. They’re a version of a classic haystack recipe with chow mein noodles. They take only simple ingredients, have great texture, and they hold up really well if you need to take them somewhere. 😍 Why You’ll Love These Chocolate Noodle Clusters
They’re ridiculously easy: melt chocolate, stir stuff in, scoop, chill, and that’s it!
The texture is fun: the crispy steam-fried noodles give you this really satisfying crunch that you just don’t get from rice cereal or pretzels.
Almonds give it a little something extra: slivered almonds add a toasty, buttery bite that rounds out the sweetness perfectly.
No oven required: a huge win any time of year, but especially in summer.
🍫 Ingredients You’ll Need for Chocolate Chow Mein Clusters
Coconut oil: helps the chocolate melt more smoothly and gives the clusters a slightly glossy finish once they set.
Semi-sweet milk chocolate chips: melt smooth and set firm enough to hold the clusters together without being too rich or too sweet.
Dried steam-fried noodles: stay crispy even after being coated in chocolate, so every bite has a real crunch to it.
Blanched slivered almonds: they add a mild nuttiness and a little bit of chew that plays really nicely against the chocolate and the crunchy noodles.
✔ How To Make Chocolate Chow Mein Clusters
Prepare a large baking sheet by lining it with parchment paper and set it aside.
Start by bringing a large pot to low heat. Add the coconut oil, and once it’s melted, add your chocolate chips. Cook on low, stirring constantly, until fully melted and smooth.
Remove from the heat and add your dried steam-fried noodles along with the blanched slivered almonds. Mix thoroughly until all noodles are coated.
Using two spoons or one large spoon, scoop about 1 to 2 tablespoons of the mixture, packing it slightly, and place each cluster onto the prepared baking sheet.
Let them cool in the fridge for 20 to 30 minutes, or alternatively, in a cool spot on your counter until fully set. Enjoy!

🗒 Variations
Dark chocolate: swap the semi-sweet chips for dark chocolate if you want something a little more intense—it pairs especially well with the almonds.
Peanut butter: stir a tablespoon of peanut butter into the melted chocolate right before adding the chow mein noodles.
Different nuts: cashews, peanuts, or macadamia nuts all work great in place of the almonds depending on what you have or like.
🗒 Substitutions
Chocolate: any melting chocolate works—dark, milk, or even white chocolate if that’s your thing.
Almonds: leave them out entirely for a nut-free version.
