Equipment

  • 1 large mixing bowl
  • 1 large sealed bag

Ingredients 

  • 8 cups rice Chex cereal
  • cup powdered sugar, aka: confectioners' sugar
  • 1/2 cup peanut butter, smooth
  • 1/2 cup white chocolate chips
  • 1/2 cup semi sweet chocolate chips
  • 1/4 cup butter, unsalted
  • 1/2 tsp vanilla
  • 1/4 tsp salt

Instructions 

  • To a medium size sauce pan, add the peanut butter, both chocolates, butter, vanilla and salt.
  • Set to low heat and stir every 30 seconds until fully melted and you've reached a smooth consistency.
    Alternatively you can use your microwave, and stir every 30 seconds.
    Set aside.
  • To a large mixing bowl, add the cereal.
  • Pour over the melted chocolate mixture and gently stir to coat, ensuring every piece of cereal is covered.
  • To a large sealed bag, add 1 cup of powdered sugar.
  • Pour in the chocolate covered cereal, followed by the remaining 3/4 cup of powdered sugar.
  • Seal the bag and gently toss until the cereal is evenly coated.
  • Transfer to parchment paper and cool for 15 minutes.
  • Store in an airtight container or sealed bag for up to 1 week.
