Jalapeño Popper Chicken Lettuce Wraps are a low carb, quick, and flavourful lunch or dinner that can be made in 20 minutes! Serve in lettuce boats, on salads, on top of crackers, or along side your favourite fresh veggies.

Equipment

  • 1 mixing bowl

Ingredients 

  • 3 chicken breasts, cooked, shredded
  • 1/2 cup plain greek yogurt, or sour cream
  • 1/4 cup cream cheese, room temperature
  • 1 cup sharp cheddar, shredded
  • 1/2 cup jalapeños, chopped
  • 1/2 cup bacon, crumbled
  • 1 tbsp fresh chives, chopped
  • 2 garlic cloves, minced
  • 1 lime, juiced
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • salt to taste
  • romaine lettuce, for serving

Instructions 

  • Begin by shredding your chicken breasts using two forks, or a hand mixer.
    Season the shredded chicken with salt and pepper.
  • To a large mixing bowl, add the shredded chicken followed by the rest of the ingredients.
  • Mix well, and season with salt to taste at the end.
    Sammys tip: if you want the mixture slightly creamier, add a few more tbsp of greek yogurt or sour cream.
  • Add the jalapeño popper chicken mixture onto your favourite salads, in lettuce boats, in a tortilla wrap, on top of crackers, or serve along side your favourite veggies.
