- 3 chicken breasts, cooked, shredded
- 1/2 cup plain greek yogurt, or sour cream
- 1/4 cup cream cheese, room temperature
- 1 cup sharp cheddar, shredded
- 1/2 cup jalapeños, chopped
- 1/2 cup bacon, crumbled
- 1 tbsp fresh chives, chopped
- 2 garlic cloves, minced
- 1 lime, juiced
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- salt to taste
- romaine lettuce, for serving
Instructions
- Begin by shredding your chicken breasts using two forks, or a hand mixer. Season the shredded chicken with salt and pepper.
- To a large mixing bowl, add the shredded chicken followed by the rest of the ingredients.
- Mix well, and season with salt to taste at the end.Sammys tip: if you want the mixture slightly creamier, add a few more tbsp of greek yogurt or sour cream.
- Add the jalapeño popper chicken mixture onto your favourite salads, in lettuce boats, in a tortilla wrap, on top of crackers, or serve along side your favourite veggies.

AMAZING!! I made these on a beautiful sunny day to eat and the pool and tbh that’s exactly the ideal scenario for these. The BF is a wimp with spice and these went too spicy for him at all. Sooooo good! Even with Greek yogurt and low fat shredded cheese!
Had a surplus of lettuce and this recipe makes the most scrumptious lettuce wraps. It is very filling and holds up in the fridge, not soggy, so it’s perfect if you want meal prep a sandwich or wrap.
