Minute Steak is the perfect go-to dinner when you need something quick, healthy, and packed with protein. They are versatile and can be used in sandwiches or served as the main dish, along side french fries, pasta, or your favourite salad.
This recipe takes me right back to my Nonna’s kitchen table when I was a young girl; she would make this recipe for me all the time. My favourite version was when she would add the minute steaks to a pita wrap with mayonnaise and chopped romaine lettuce. Minute Steaks are a quick and flavourful lunch or dinner that requires minimal prep work, which makes this an ideal busy weekday recipe.

What type of cut should I use in this recipe?
Minute Steaks can be cut from a variety of different muscles, so use what you have on hand. Typically, most Minute Steak recipes use sirloin as the cut, which helps to ensure a more tender piece of meat, but you can also use rump or flank. Just be sure to cut the meat thin, tenderize with a meat mallet, and cook it quickly.
Minute Steak in 4 steps
- Prepare your steaks: Thinly slice your steaks into 1/4 inch pieces (or less if you can).
- Tenderize the steaks: Tenderize the meat by using a meat mallet or meat tenderizer.
- Season: Season the steaks on both sides, generously.
- Fry: Pan fry the steaks on each side for 1-2 minutes, basting with the herb and garlic infused butter.

- minute steaks: sirloin, game, or any other type of beef steak will work, just be sure to use a meat mallet to tenderize the steaks.

- garlic cloves
- salt
- pepper
- garlic powder
- onion powder
- dried oregano
- dried basil
- fresh thyme: or fresh herbs of choice
- fresh sage: or fresh herbs of choice
- red wine vinegar: to garnish, optional
Storing & reheating
Have leftovers? Lucky you. Store them in the refrigerator in an airtight container for up to 4 days. To reheat your Minute Steaks, simply microwave for 30-45 seconds with about 1/2 tsp of butter on the top. Keep in mind these won’t be as tasty as they were when fresh, but they still taste good!

Minute Steak
Ingredients
- 6 minute steaks , sirloin, thinly sliced
- 3 tbsp butter, unsalted
- 2 tbsp olive oil
- 2 garlic cloves, whole, peel removed
- salt
- pepper
- garlic powder
- onion powder
- dried oregano
- dried basil
- fresh thyme, small handful
- fresh sage, small handful
- red wine vinegar, to garnish, optional
Instructions
- Begin by slicing your steaks into thin pieces if they aren't already.Tenderize the steak by using a meat mallet, striking the steak several times, beginning in the middle and working your way to the edges. They should be thin, no more than 1/4 inch thick.
- To each side of the steak, season with salt, pepper, garlic powder, onion powder, dried oregano and dried basil.
- To a large pan, add your olive oil and butter and set to medium/high heat.
- Add your minute steaks, garlic cloves, fresh thyme and fresh sage, working in batches if you need to avoid crowding the pan.
- Pan fry the steaks on each side for 1-2 minutes, basting the steaks with the butter and olive oil.
- Remove the steaks and top with the remaining butter in the pan.
- Top with a splash of red wine vinegar.
- Serve on the side of salad, rice, pasta or mashed potatoes.
- Enjoy!
