🗒 Ingredients You’ll Need To Make Golden Citrus Chicken Marinade
Chicken breasts: alternatively you can use thighs or drums.
Olive oil: used in the marinade which allows the chicken to retain moisture and creates a golden crust when grilled or fried.
Orange juice: freshly squeezed, gives the chicken a slightly sweet, bright citrus flavour.
Lemon juice: adds a subtle zest which cuts through the bitterness of the olive oil.
Vanilla: I am using Simply Organic Pure Madagascar Vanilla Extract which adds a warm, slightly sweet flavour that complements the citrus.
Garlic cloves: for a zesty kick.
Ginger root: adds a distinct and slightly spicy flavour profile which pairs well with the garilc.
Perfect seasoning blend: salt, pepper, garlic powder, onion powder, sage, thyme, and parsley.

Prep the chicken: first, blot the chicken dry and slice into cutlets.
Season: secondly, season the chicken on both sides with my perfect seasioning blend.
Prep the marinade: then, add all of the marinade ingredients to a small mixing bowl and whisk well.
Marinade: then, pour the marinade directly over the chicken and toss to combine, ensuring each piece is fully covered.
Rest: for 1 hour, or up to 4 hours.
Cook: finally, bake, fry or grill.

Chicken: alternatively, you can use chicken thighs for an even juicier result. Moreover, this marinade works on pork, shrimp or your favourite vegetables.
Acid: in addition, you can swap the lemon juice for lime juice or your favourite vinegar. However, I do recommend using fresh over bottled.

Golden Citrus Chicken Marinade
Equipment
- 1 mixing bowl
- 1 Large frying pan
Ingredients
Chicken:
- 4 chicken breasts, cut horizontally to make 8 thinner pieces
- salt
- pepper
- garlic powder
- onion powder
- dried sage
- dried thyme
- dried parsley
Marinade:
- 3 tbsp olive oil, extra virgin
- 1/4 cup orange juice, freshly squeezed
- 2 tbsp lemon juice, freshly squeezed
- 1/2 tsp vanilla, I am using Simply Organic
- 2 garlic cloves, minced
- 1 tbsp fresh ginger root, minced
- 1/4 tsp salt, or more to taste
Instructions
- Prepare the chicken: using paper towel, blot the chicken on both sides to remove any excess moisture. Next, carefully slice through the chicken breast horizontally from one side to the other until sliced all the way through creating two thinner pieces. Repeat until you are left with 8 pieces of chicken.
- Season: generously season both sides of your chicken with salt, pepper, garlic powder, onion powder, dried sage, dried thyme, and dried parsley.Add the prepared chicken to a large bowl or resealable bag.
- Prepare the marinade: to a small mixing bowl, add all of the marinade ingredients and mix well.
- Marinade: pour the marinade directly over the chicken ensuring every piece is well-coated.
- Rest: allow the chicken to rest for at least 1 hour in the fridge, or up to 4 hours. (see notes below)
- Cook: bake, fry or grill as desired. Once your chicken reaches an internal temperature of 165 °F it's ready.Allow to rest for 5 minutes before slicing.
