It’s comforting, rich, and so dang flavourful. Serve this with your favourite pasta, polenta or rice, and I promise you’ll keep coming back to this kid-friendly creamy classic.

3 steps to make Beef Stroganoff

  1. Brown your ground meat of choice with garlic, shallot and spices.
  2. Add your mushrooms, pasta of choice, beef stock and let simmer until pasta is nearly cooked.
  3. Add your sour cream, heavy cream, and mix to combine.

  • olive oil
  • pasta of choice: I am using Strozzapreti, but egg noodles also work great.
  • ground beef: you can also use turkey or chicken.
  • garlic cloves
  • shallot: or yellow onion
  • white button mushrooms: or cremini mushrooms.
  • worcestershire sauce
  • beef stock: or vegetarian stock. 
  • sour cream: or greek yogurt.
  • heavy cream
  • salt
  • black pepper
  • onion powder
  • smoked paprika

Substitutions & FAQ’s

Add extra veggies: if you want to up the veggies in the recipe, feel free! Anything goes. A few favs are: zucchini, green pepper, and spinach.

Use a different protein: if you aren’t a fan of ground beef, or don’t have any on hand, you could also use turkey or chicken. You can also use top sirloin, boneless ribeye, or beef tenderloin.

Make it vegetarian: want to skip out on the meat? You can make this recipe vegetarian by using just the mushrooms, and subbing for a vegetarian stock.

Use your favourite pasta: egg noodles, rice, or any smaller pasta will work in this recipe.

Storing & reheating

Have leftovers? Lucky you! Let the leftovers to cool until room temperature and then refrigerate for up to 4 days.

Freezer details: If you are looking at freeing this Beef Stroganoff, I recommend cooking your pasta the day you plan to eat it. Freezing the pasta results in a mushy texture.

Beef Stroganoff

Beef Stroganoff is a classic, creamy, comfort meal that just so happens to be kid-friendly. It's loaded with ground beef, mushrooms and a delicious garlicky cream sauce. If you are looking for an easy weeknight dinner that can be made using one-pot and whipped up in about 20 minutes, you've got to give this one a go!
Prep: 10 minutes
Cook: 10 minutes
Servings: 4 people

Ingredients 

  • 1 tsp olive oil
  • 400 grams egg noodles or pasta of choice, I am using Strozzapreti
  • 1 lb lean ground beef
  • 3 garlic cloves, minced
  • 1 shallot, chopped fine
  • cups white button mushrooms (227 grams)`
  • 2 tbsp worcestershire sauce
  • cups beef stock, salted
  • 3/4 cup sour cream
  • 3 tbsp heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 1/2 tsp smoked paprika
  • parmesan, optional to garnish
  • fresh parsley, optional to garnish

Instructions 

  • To a large pan, add the olive oil and set to medium/high heat.
  • Add the ground beef and fry for 3-4 minutes, or until it begins to brown.
  • Add the garlic, shallot, mushrooms and seasionings, and let cook for an additional 2-3 minutes, just until the mushrooms are softened and the garlic becomes fragrant.
  • Add the pasta and beef stock and stir to combine.
  • Cover, and let simmer for 8-10 minutes, or until the pasta has fully cooked and the liquid has been absorbed.
  • Once the pasta is almost cooked, remove the lid, add the sour cream, heavy cream, and mix to combine until.
    Let simmer uncovered for the last 2-3 minutes.
    Tip: If it appears to be too dry, add more beef stock and continue cooking. If there seems to be too much liquid, continue to simmer with the lid removed.
  • Top with parmesan cheese and fresh parsely.
  • Enjoy right away!
