These are my easy Bang Bang Chickpea Lettuce Boats and they are the the perfect lunch for when you need something that is low effort, high in protein, and delicious.

The chickpeas are roasted in the air-fryer which gives them this delicious crunch and then covered in a simple, but flavourful homemade bang bang sauce. I personally love to add the chickpeas to romaine lettuce “boats” but you can add this onto rice or a leafy green salad (which also tastes amazing).

  • Chickpeas
  • Romaine lettuce
  • Olive oil
  • Hot sauce
  • Sweet chilli sauce
  • Mayonnaise
  • Lime juice
  • Honey
  • Salt
  • Pepper

Tips before getting started

Pat the chickpeas down really well with some paper towel; making them as dry as possible. This will result in crispier chickpeas.

You can use either an air-fryer or oven here just depending on what you have. If you don’t have an air- fryer I would suggest adding these to your oven at 400° for about 15-20 minutes, stirring often until they become crunchy.

Once the chickpeas are nice and crispy you can add your bang bang sauce; just be sure to let them cool slightly before doing so.

Top with whatever veggies you like! Some personal favourites are: cucumbers, carrots, cabbage and avocado.

Substitutions & FAQ’s

How do I store this recipe if I want to double or triple this recipe for meal prep?
I like making a double (or triple) batch of this recipe so I can eat it for a couple days. If you want to do the same, I recommend adding the bang bang sauce to the chickpeas as you eat, rather than adding all of the sauce right away just to avoid the chickpeas from becoming soggy.

How do I store the roasted chickpeas?
Once the chickpeas have been completely cooled add them to an airtight container and use within 3 days.

How long do I need to roast the chickpeas for?
It will determine what you use to roast the chickpeas! An air-fryer usually takes about 7-10 minutes, where as an oven will take 20-25 minutes.

Do I need to roast the chickpeas?
You can just rinse, drain, and pat the chickpeas dry and add the bang bang sauce if that’s more your style! I just love how roasting the chickpeas gives the dish a nice additional crunch.

Bang Bang Chickpea Boats

These are my super easy Bang Bang Chickpea boats and they are such a good go-to high protein lunch. They are loaded with my easy, but incredibly flavourful bang bang sauce that goes really well with the roasted chickpeas and fresh crunchy romaine lettuce. Top these off with you favourite fresh veggies and enjoy!
Prep: 5 minutes
Cook: 10 minutes
Servings: 2

Ingredients 

  • 1 can chickpeas, (540 ml)
  • romaine lettuce , ends removed
  • 1 tsp olive oil
  • 1 tbsp light mayonnaise
  • 1 tbsp sweet chilli sauce
  • 1 tsp hot sauce, of choice
  • 1 tsp honey
  • 1/2 lime, juiced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 3 stalks green onions, chopped
  • sesame seeds, optional

Instructions 

  • Begin by rinsing your chickpeas really well.
  • Using paper towel, pat to dry.
  • To a bowl add you chickpeas, olive oil, salt, pepper, onion powder, garlic powder, and smoked paprika. Mix well.
  • Add the chickpeas to a 400 °F air-fryer and roast for 7-10 minutes, or until crispy. Once crispy and cooked to your liking, remove from the air-fryer and let cool slightly.
  • While your chickpeas are cooling, mix together your bang bang sauce by combining the mayonnaise, sweet chilli sauce, hot sauce, honey and lime juice.
  • Pour the bang bang sauce over the chickpeas, and mix well.
  • Scoop the bang bang chickpeas into your romaine lettuce boats and top with green onions and sesame seeds.
    Tip: you can also top with any additional veggies of choice: cabbage, cucumbers, carrots, etc.
  • Enjoy!
