Bang Bang Chicken is one of my families favourite dinners, and for good reason. It’s sweet & spicy, smothered in the most delicious creamy (and drinkable) sauce, and the best part is, that it can be made in under 20 minutes. If so, this Bang Bang Chicken is the ultimate meal-prep lunch. When I was working in my office downtown, I would make a double or triple batch of this recipe and portion it out to take for the week. Serve with some rice, quinoa or veggie of choice, and this makes for the perfect make-ahead lunch.

  • chicken breasts
  • eggs
  • breadcrumbs
  • mayonnaise
  • sweet Thai chilli sauce
  • honey
  • hot sauce
  • lime
  • basmati rice
  • green onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Storing and reheating

Have leftovers? Lucky you. Store them in the refrigerator in an airtight container for up to 4 days.
To reheat your Bang Bang Chicken, simply microwave for 30-45 seconds or heat in a small saucepan on the stove for 2-3 minutes, or until heated throughout.

Bang Bang Chicken

Bang Bang Chicken is sweet & spicy, smothered in the most delicious creamy (and drinkable) sauce, and the best part is, that it can be made in under 20 minutes. This recipe is the perfect go-to for a busy weeknight dinner, but also works great for meal-prep. Feel free to fry the chicken or opt for a lighter option, and bake in the oven.
Prep: 10 minutes
Cook: 10 minutes
Servings: 2 people

Ingredients 

Chicken:

  • 2 chicken breasts, chopped into bite sized pieces
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 egg, beaten
  • 3/4 cup seasoned breadcrumbs

Bang Bang Sauce:

  • 1/4 cup mayonnaise
  • 1/2 cup sweet Thai chilli sauce
  • 1 tsp honey
  • 1 tbsp hot sauce
  • 1/2 tsp garlic powder
  • 1/2 lime, juiced

Sides+Garnish:

  • 1 cup basmati rice, uncooked
  • 1 lime, sliced into wedges, to garnish
  • green onions, chopped, to garnish

Instructions 

  • Begin by preheating your oven to 400 °F.
  • Start by preparing your rice or quinoa to serve as the side, if using.
  • Chop your chicken breasts into bite sized pieces and add to a medium sized bowl.
    Add all of the chicken ingredients, except the breadcrumbs, and mix to combine.
  • Add half of the breadcrumbs to the chicken, toss gently, then add the remaining half, ensuring all pieces of chicken are covered evenly.
  • To a large baking sheet, sprayed gently with cooking oil, add your chicken.
    Tip: shake off any excess breadcrumbs before adding to your baking tray in a single layer.
  • Bake for 8-11 minutes, or until cooked through, and the chicken reaches 165 °F.
  • While the chicken is baking, prepare for bang bang sauce by combining all of the ingredients in a small bowl, mixing to combine.
    Set aside until ready to use.
  • Add your cooked chicken to a medium sized bowl.
    Pour over the bang bang sauce, leaving about 1/4 cup to drizzle on top.
    Gently mix to combine.
  • Serve over rice or quinoa.

  3. This sounds so good!! Can the chicken breasts be substituted with chicken thighs? I like the juicier dark meat usually and am hoping that would be good too?

    So easy. So good. I love that you just throw it on a sheet pan instead of pan frying. Added bell peppers for some veg.
