It doesn’t get much easier than this 2 ingredient Tortellini Soup! I grew up eating this at least once a week and I know why; it’s quick, comforting, filling, affordable and kid-friendly.

My mom used to make this for my brother and I all the time, especially during busy weeknights when we were playing sports and had extra circulars going on and she didn’t have a ton of time to cook. I am convinced this is the easiest and most delicious 2 ingredient dinner you can possibly make. My kids go crazy for this soup, and since I buy the beef filled tortellini and use my Homemade Chicken Broth, I serve this as a full meal deal. If you’ve ever had tortellini, you know just how filling it is. You need to top this one off with loads of fresh cracked pepper and freshly grated pecorino romano cheese.

How do you make homemade chicken broth?

Everyone makes chicken broth a bit differently. There is also differences between chicken broth and chicken stock and I will get into that whole debate in a second. The way my mom has done it for years is truly my favourite way to make chicken broth, and I have tried a number of different ways and recipes. Also, I promise you this recipe will be one of the easiest recipes you will find which gives you such an incredibly flavourful golden broth that you can use in soups, chilli, risotto, or just to fill a big cup with (which is what I always do!)

Ingredients

Here is a quick overview of the ingredients you’ll need to make my Tortellini Soup. For the exact detailed measurements and ingredients, scroll to the bottom of this page to review my recipe card.

  • 6-7 cups homemade or store-bought chicken stock: salted
  • 500 grams tortellini: beef filled
  • pecorino romano: freshly grated, optional (but highly recommend!)

Storing & reheating

Have leftovers? Lucky you. Store them in the refrigerator in an airtight container for up to 2 days. To reheat, simply microwave for 45-60 seconds or add to a small pot and let simmer on your stove for 2-3 minutes.

Can I freeze this recipe? I don’t recommend freezing this recipe as the tortellini changes texture once cooked and then frozen.

Tortellini Soup

It doesn't get much easier than this kid-friendly 2 ingredient Tortellini Soup. It's quick, comforting, filling, and the perfect go-to dinner when you need to get something on the dinner table, quickly.
Cook: 5 minutes
Servings: 4 people

Ingredients 

  • 6-7 cups homemade or store-bought chicken stock, salted
  • 500 grams tortellini, beef filled
  • pecorino romano, freshly grated, optional

Instructions 

  • Begin by bringing 6 cups of chicken broth to a light boil.
  • Add the tortellini and boil until they begin to float and become fork tender.
    Cook as per package instructions.
  • Add an additional cup of chicken broth if you want more broth.
  • Dish up and top with cracked black pepper and loads of freshly grated pecorino romano cheese.
  • Enjoy!
