This is my one-pot Spicy Penne Rosé with Sausage & Spinach. It is loaded with flavour and is so incredibly creamy and delicious, I promise your family is going to love this one. Any time I go to a restaurant and their menu has a spicy sausage pasta as an option, I’m ordering it.

Substitutions & FAQ’s

Anytime a recipe calls for heavy cream make sure you are buying the 33% cream. Often times people think the 18% or even 10% is good enough for a recipe that calls for heavy cream and typically it’s not. You need something higher in fat to avoid it from becoming gritty and breaking down. Typically I buy the Dairyland 33% whipping cream (see below).

Can I use other pastas in this dish?
You can absolutely use any type of pasta you’d like in this dish, although I would recommend using shorter pastas such as: rigatoni, macaroni, or penne and longer pastas tend to break in one pot dishes.

Can I use a mild italian sausage?
If you are looking to make this recipe but you don’t want the heat, feel free to use a mild Italian sausage and omit the chilli flakes.

Can I substitute the cream for milk?
Nah. This dish really needs the heavy cream to make it silky, creamy, and smooth, so definitely don’t skip out on the heavy cream!

Can we store any left over pasta?
Oh ya! I don’t have a microwave so I add my leftover pasta to a pan with a little splash of heavy cream or water, cover it with a lid, and simmer for a few minutes just until the pasta is heated throughout.

What pairs well with this pasta if I want to serve it with a side?

If I am making a side dish for this pasta I usually pair it with a big leafy green salad with some olive oil, vinegar, and a little bit of salt or some crusty garlic bread.

Spicy Penne Rosé with Sausage & Spinach

This is my one pot Spicy Rosé Sausage & Spinach Penne that is made all in one pan to make your weeknight dinners simple but so delicious. This dinner also takes under 20 minutes to whip together so it is perfect when you only have a few ingredients on hand and need to get something on the table. Hope you love this one.

Cook: 10 minutes

Ingredients 

  • 250 grams penne, or pasta of choice
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, finely chopped
  • 1 shallot, finely chopped
  • 4 hot italian sausage
  • 1/4 cup tomato paste
  • 1 cup tomato sauce
  • 1 cup vegetable stock, salted
  • 3/4 cup heavy cream
  • 1/2 cup water
  • 2 cups spinach, roughly chopped
  • 3/4 cup mozzarella, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/2 tsp red pepper flakes
  • fresh basil, optional

Instructions 

  • Begin by chopping up your garlic, shallot and spinach. Set aside.
  • Next, remove the casings from your Italian sausage and break into bite-size pieces. Set aside.
  • To a large frying pan add your olive oil. Once hot, add your Italian sausage and fry for 4 to 5 minutes, just until the sausage begins to brown.
  • Add, your garlic, shallot of chilli flakes and sauté on medium heat for 1 to 2 minutes.
  • Add your tomato paste and sauté on medium heat until it changes to a dark red colour. About 3 minutes.
  • Add your penne, tomato sauce, stock, heavy cream and water.
  • Bring to a boil, cover and reduce heat to a simmer and cook on low/simmer until the pasta has cooked and absorbed the liquid. About 10 – 12 minutes.
    *Tip: make sure you stir the pasta often just to avoid it from sticking to the bottom of the pan.
  • Turn the burner off, remove the lid, add your spinach and mozzarella and mix well.
  • Top with fresh basil and grated parmesan.
  • Enjoy right away!

    Easy to make, easy cleanup, delicious meal (and leftovers). Used blended San marzanos instead of tomato sauce. 👌🏼

    Love this! So easy. I’ve used other meat as well and it works just as good! Always delicious. Also last time I just used a full can of tomato sauce instead of the paste and sauce combo so that I wasn’t left with the partial cans of each. And I often don’t have cream – but I keep coconut milk powder on hand and I found it adds a nice creaminess to it still! And lately we put kale instead of spinach because we have so much kale in the garden – still delicious! Apologies if my substitutions aren’t acceptable to all! It’s what works for me so thought I’d share 🙂

    Just made this pasta! So easy and sooo yummy. Subbed the heavy cream for a dairy free version and it seemed to work just as well.

    Super delicious! It took longer than indicated because the noodles weren’t cooking. I added another 1.5 cups of water to finish it off. I wonder if it was the pan I used (standard large cast iron) or if my box of pasta was larger than yours. Either way it was amazing when it was finished!

    I have made this a few times now. Because I had just made a sausage dish a couple days ago, I decided to use shrimp for this recipe tonight. I cooked the shrimp in the garlic, onion and peppers then removed them until just before serving. I also didn’t have fresh spinach so I threw in a few cubes of frozen spinach and some frozen broccoli. That’s what I like about your recipes. You can easily make substitutions and it’s still delicious!! Thank you for all the wonderful recipes ❤️

    I made this for the first time tonight and it was great. I forgot to add the spinach and used homemade chicken stock I had in the freezer. Right before serving I put a freak ton of parm and fresh basil. 20/10. When packing up the little remaining leftovers, my husband took a bite and said it was better after sitting for a bit. Next time I make this, I’ll let it sit for a little bit to all come together/thicken up. Thank you!!
