This Shaved Brussels Sprouts Salad with a garlicky hummus caesar dressing, is creamy, delicious and so addicting. It has everything you’d want from a regular caesar salad, with a twist. This version is much lighter as we use a hummus base, tahini, lots of fresh lemon, garlic and finish it off with a handful of toasted breadcrumbs.
My Shaved Brussels Sprouts Salad can be made in under 20 minutes. You can choose to chop the brussels sprouts pretty fine, or use a mandolin to achieve paper thin slices. This salad is a great option for a healthier take on a regular Caesar salad which can be made mid week, for a lighter dinner option. This salad also works really well as a simple and delicious side to your Thanksgiving dinner. Can I make this salad in advance?
You sure can! I recommend keeping the dressing on the side until you are ready to serve.
Can I make the dressing the day before serving?
Absolutely! Feel free to make this dressing 2-3 days before you plan to use.
How can I make this recipe 100% vegan?
Remove the anchovy paste and replace with capers. In addition, don’t top with the freshly grated parmesan cheese.
Can I use a brussels sprouts/coleslaw bag instead of chopping my own?
Yes, great idea! This will save a lot of time as well.
Can I store any leftovers?
I do recommend eating this salad as fresh as possible, but because the brussels sprouts are crunchy, this will last in your fridge for up to 2 days.
Shaved Brussels Sprouts Salad with Hummus Caesar Dressing
Ingredients
- 1 lb bag brussels sprouts, sliced fine
- 1/3 cup hummus
- 1 tbsp tahini
- 2 garlic cloves, chopped fine
- 1 tbsp capers, with some of the juice
- 1 tsp anchovy paste
- 1 tsp worcestershire
- 1/2 tsp dijon mustard
- 1 tsp maple syrup
- 1 tsp warm water
- 1/2 lemon small lemon, juiced
- 1 tbsp butter
- 1/3 cup seasoned breadcrumbs
- 1/3 cup parmesan cheese, grated
Instructions
- Begin by preparing your brussels sprouts. Remove the ends from your brussels sprouts and begin slicing them into thin strips using a sharp knife or mandoline.Add to a large bowl.
- Using an immersion blender or small blender, add your hummus, tahini, capers, anchovy paste, garlic, worcestershire, dijon mustard, maple syrup, warm water, and lemon juice. Blend to combine. Taste for seasoning, and set aside.*Tip: add a little splash of warm water to achieve desired consistency.
- Prepare your breadcrumb topping by adding your butter to a small saucepan set to low/medium heat. Add your breadcrumbs and cook on low for 3-4 minutes, stirring often, until golden brown. Set aside.
- Add your dressing to your brussels sprouts, toss to combine. Top with toasted breadcrumbs, parmesan cheese and lots of fresh cracked pepper.
- Enjoy right away!

I made this for our family’s Thanksgiving dinner. The dressing is AMAZING and pairs perfectly with the parm and brussels sprouts! I felt like the seasoned breadcrumbs overpowered everything though. Perhaps it was just the brand I used, but next time I may opt to use plain or omit them altogether.
