What is orzo?

Orzo is a thin, oval-shaped pasta that is incredibly versatile. It is really common to see orzo in pasta (hot and cold), soups, and in different types of bowls. Orzo, despite looking like rice, is not gluten-free and is made from semolina flour.

  • Orzo
  • Chickpeas
  • Red pepper
  • Orange pepper
  • Feta cheese
  • Pepperoncini + juice
  • Cherry tomatoes
  • Mini cucumber
  • Green olives or kalamata olives
  • Croutons
  • Olive oil
  • Lemon
  • Garlic
  • Fresh basil
  • Italian parsley
  • Oregano
  • Salt + pepper

Orzo Pasta Salad

Are you ready to impress at your next pot luck? This Orzo Pasta Salad with Pepperoncini and Croutons will be the first thing to go because it's so dang delicious.This recipe is packed with fresh veggies and topped with the perfect light, but flavourful dressing. Ingredients 

Salad

  • 1 cup orzo, cooked and cooled
  • 1 cup chickpeas, rinsed, drained and patted dry
  • 1/2 red pepper, chopped
  • 1/2 orange pepper, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 mini cucumbers, chopped
  • 1/2 cup cherry tomatoes , chopped
  • 1/3 cup pepperoncini,
  • 1/2 cup green olives or kalamata olives , roughly chopped
  • 3/4 cup seasoned croutons

Dressing

  • 1/4 cup olive oil, extra virgin
  • 1/2 lemon , juiced
  • 1-2 tbsp pepperoncini juice
  • 1 large garlic clove, chopped fine
  • 3 tbsp fresh basil
  • 3 tbsp fresh Italian parsley
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions 

Salad:

  • Add all of your pasta salad ingredients to a large bowl, combine well.
  • Tip: If you are not serving right away, wait to add the croutons until ready to serve to prevent them from becoming soggy.

Dressing:

  • Add all ingredients to a small bowl. Mix well.
  • Pour over pasta salad and mix to combine.
  • Taste for additional seasonings, and let sit for at least 20 minutes before serving.
  • Enjoy!
