Can I use chicken breasts instead of thighs?
You sure can, they may just take a little longer to cook depending on how thick the breasts are. If you are using chicken breasts I recommend slicing them down the middle, making them slightly thinner to allow a faster cook time.
Can I used canned or jarred jalapeños instead of fresh?
Yes! Especially if you are looking to reduce the spice in this recipe; using jarred jalapeños will be a better option.
How long does it take for my chicken thighs to be cooked all the way through?
Usually with boneless skinless chicken thighs it takes about 3-4 minutes per side, but once the chicken reaches and internal temperature of 165°F you know it safe to eat!
Storing & reheating
Chicken Thighs with Jalapeño Creamed Corn will keep fresh in the fridge in an airtight container for up to 3 days.
Want to re-heat this recipe?
Simply add the chicken and corn to a frying pan, add a splash of water, cover and set to medium/high heat. This will allow the leftovers to steam and heat throughout without having to add any oil or cream.
Alternatively, you can microwave for 30 to 45 seconds.

Chicken Thighs with Jalapeño Creamed Corn
Ingredients
Chicken:
- 1 tbsp olive oil, to fry the chicken
- 1 tbsp butter, to fry the chicken
- 6 chicken thighs, boneless, skinless
- salt
- pepper
- 1/2 tsp onion powder
- 1/2 tsp dried cilantro
- 1/2 tsp chilli powder
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
Creamed Corn:
- 1½ cups canned corn (or approx 341 mL)
- 1 small yellow onion, chopped fine
- 1/2 cup chopped jalapeños
- 2 garlic cloves, chopped fine
- 1/3 cup cream cheese
- 1 cup sharp cheddar, shredded
- 3/4 cup heavy cream
- 1/2 tsp dried cilantro
- 1/4 tsp chilli powder
- 1/4 tsp salt
Toppings:
- fresh cilantro, chopped, optional
- ranch or blue cheese, optional
- fresh lime, optional
Instructions
- Begin by patting the chicken thighs with paper towel. Season generously on both sides with salt and pepper.
- To a small bowl, mix together the remaining chicken seasonings.
- Add the seasonings to both sides of the chicken thighs, ensuring all parts of the chicken have been coated evenly.
- To a large pan, set to medium/high heat, add the olive oil and butter.
- Once hot, add the chicken thighs and pan fry on each side for 3-4 minutes. Once cooked, remove from the pan, set aside and cover with foil to keep warm.
- To the same pan add the onions and jalapeños and let sauté for 3 to 4 minutes. Next, add the garlic, corn, creamed corn seasonings, and let sauté for an additional 2 minutes on medium heat.
- Add the heavy cream and cream cheese and mix together until the cream cheese has melted into the cream.
- Add the shredded cheddar and let simmer for about 2 minutes or until it has melted and the creamed corn has thickened.Sammy's tip: add another splash of cream if you need to thin it out.
- Taste here for any additional seasioning.
- Add the creamy jalapeño corn to a plate, top with the chicken thighs, a drizzle of ranch, fresh cilantro and a squeeze of lime.
- Enjoy right away!

I made this tonight and the family asked for it to go to our family favorites folder! I doubled the spices because we like a lot of flavor and topped it with Mexican crema. Sammy! This was delicious! Love that the flavors came from seasonings and not a lot of salt. That seasoned chicken I would it eat any day, perhaps I’ll even try grilling it! Yum! The corn could stand on its own as well, but together this was fabulous!

This was really good! I used frozen corn and it was awesome.
I browned some panko in butter and sprinkled it on top. It was really nice texturally and made it more jalapeno poppery!
