Brie Bites with Red Pepper Jelly are one of the easiest appetizers to make, requiring only 4 simple ingredients! They are great for holiday gatherings, especially if you are hosting, as these take only a few minutes to whip together.
The individual puff pastries are stuffed with creamy brie, red pepper jelly and topped with a sprig of rosemary. You can also get creative here and make these to your liking! Sometimes I will use fig jam, blueberry jam and add nuts such as pecans or walnuts. However you choose to make these will leave your guests likely asking for the recipe. Down below I will share with you some tips, tricks and answers to commonly asked questions to ensure these come out beautiful and delicious the first time you make them!

Here is a quick overview of the ingredients you’ll need to make my Brie Bites with Red Pepper Jelly. For the exact detailed measurements and ingredients, scroll to the bottom of this page to review my recipe card.
- Pillsbury flaky rolls: you can also use other Pilsbury dough such as: croissant dough or original dough sheets, although I prefer how puffy the flaky rolls get.
- Brie: the creamier the better in my opinion! I used the creamy and ripened brie from the brand Ice De France.
- Red pepper jelly: you can also substitute for other jams such as: fig, blueberry and jalapeno.
- Egg: although its not necessary, it does add a little extra crispness to the top which I really enjoy.
My tips before getting started
- Prepare your dough first. Since the dough will double in size when you bake it, I recommend cutting the dough pieces in half. If you are using a dough that is in a sheet, and not pre cut in circles, prepare 2 inch squares and flatten.
- Cut your brie in similar sized pieces so every bite is made similar!
- Lightly fold the sides of the pastry on top of the brie and jelly mixture.
- Cool on a wire rack to prevent the bottom from getting soggy.
- Top with fresh rosemary and serve right away.

Brie Bites with Red Pepper Jelly
Equipment
- 1 mini muffin tin
Ingredients
- 1 pillsbury flaky rolls dough, 340 grams
- 1 wheel of brie, 125 grams, cubed
- 1 egg, beaten
- red pepper jelly, to taste
- fresh rosemary, optional for topping
- cooking spray
Instructions
- Begin by setting your oven to 375 °F.
- If you are using the flaky rolls that come pre sliced, cut them in half, and gently roll them into 2 inch circles.If you are using the dough sheets, simple cut 2 inch squares.
- Cube your brie into similar sized pieces. *Tip: add your brie to the freezer 15 minutes before you prepare your appetizer to allow it to slightly harden, making it easier to cut.
- To a mini muffin tin, spray generously with cooking spray.
- Add one piece of puff pastry to the centre of each muffin cup, followed by a cube of brie and a small spoon of red pepper jelly.
- Fold the sides of the pastry slightly over the brie and jelly.
- Add your egg wash to the top edges of your brie bites.
- Bake for 10-15 minutes or until golden and cooked through.
- Cool on a wire rack for 5 minutes and then top with fresh rosemary.
- Enjoy right away.

Hi- Can the brie bites be made earlier in the day and popped into oven closer to guest arrival?
I recommend making these the day of. You can prep them and add them to the oven when your guests arrive, or just before you are about to leave if you are taking these as an appetizer somewhere else!

What is the Pillsbury flaky rolls? Is it biscuits or crescent rolls?
It’s more like a biscuit, although both would work. Each store sells different pre-made pillsbury rolls so whatever you can find at your local grocery store will absolutely work!
