Brie Bites with Red Pepper Jelly

- 1 pillsbury flaky rolls dough 340 grams
- 1 wheel of brie 125 grams, cubed
- 1 egg beaten
- red pepper jelly to taste
- fresh rosemary optional for topping
- cooking spray
Begin by setting your oven to 375 °F.
If you are using the flaky rolls that come pre sliced, cut them in half, and gently roll them into 2 inch circles.If you are using the dough sheets, simple cut 2 inch squares. Cube your brie into similar sized pieces. *Tip: add your brie to the freezer 15 minutes before you prepare your appetizer to allow it to slightly harden, making it easier to cut. To a mini muffin tin, spray generously with cooking spray.
Add one piece of puff pastry to the centre of each muffin cup, followed by a cube of brie and a small spoon of red pepper jelly.
Fold the sides of the pastry slightly over the brie and jelly.
Add your egg wash to the top edges of your brie bites.
Bake for 10-15 minutes or until golden and cooked through.
Cool on a wire rack for 5 minutes and then top with fresh rosemary.
Enjoy right away.
