If hamburger helper was part of your childhood, this Cabbage Hamburger Helper is going to win you over as an adult. It has all that same cheesy, saucy, comforting appeal, but swapping in cabbage for pasta keeps things lighter without losing any of the flavour. It comes together in one pan in under 30 minutes, which makes it an easy pick for busy weeknights when you still want something that tastes like a real dinner.

A skillet on a wooden table contains cooked ground meat, onions, and noodles, garnished with herbs in a delicious homemade hamburger helper recipe. A red and white striped towel is next to the skillet.

This homemade hamburger helper recipe is such a fun variation of the nostalgic classic. The cabbage gets sliced into long ribbons so it cooks down almost like noodles, soaking up the tomato paste and broth as it softens. Once the beef goes back in with the spices, a splash of heavy cream and a big handful of sharp cheddar turn everything into a rich, saucy skillet dinner. Want more comforting skillet dinners? 🥬 Ingredients You’ll Need To Make This Cabbage Hamburger Helper

Olive oil: used to brown the beef and build the base of flavour in the pan.
Ground beef: browned before the cabbage and sauce come together around it.
Green cabbage: sliced into long, noodle-like strips so it cooks down tender and soaks up all the sauce.
Garlic: added early for a warm, savoury backbone to the sauce.
Yellow onion: adds sweetness and depth to the base.
Tomato paste: cooked until it deepens in colour to concentrate its flavour before the broth goes in.
Beef broth: use low sodium so you can control the seasoning.
Sharp cheddar cheese: shredded and stirred in at the end so it melts into a creamy, cheesy sauce.

Heavy cream: adds richness and helps the cheese melt smoothly into a velvety sauce.
Salt: adjust to taste.
Black pepper: adds a little warmth and balances the richness.
Garlic powder: layers in extra depth alongside the fresh garlic.
Onion powder: rounds out the onion flavour throughout the dish.
Italian seasoning: adds a herby note that ties the spices together.
Chili powder: brings a subtle warmth without making the dish spicy.
Smoked paprika: adds a deep, smoky note.
Red pepper flakes: leave out if you prefer things mild.
Chives: sprinkled on top for a fresh, mild oniony finish.

✔ How To Make Cabbage Hamburger Helper

Thinly slice the green cabbage into long, noodle-like strips. Mince the garlic, finely chop the yellow onion, and grate the sharp cheddar cheese. Set aside.

Heat the olive oil in a large, deep frying pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked.

Using a slotted spoon, transfer the beef to a bowl. Leave about 1 tablespoon of fat in the pan, draining any excess.

Reduce the heat to medium-low. Add the onion and sauté for 4–5 minutes, or until softened. Stir in the minced garlic and cook for another 30 seconds.

Add the tomato paste and cook, stirring frequently, for about 2 minutes, until it deepens in colour.

Pour in the beef broth and stir, scraping up the browned bits from the bottom of the pan.

Add the cabbage and toss to coat. It will look like a lot at first, but it will shrink and release liquid as it cooks. Cover and cook, stirring occasionally, for 7-10 minutes, or until nearly as tender as you like.Add a small splash of broth if the pan becomes dry.

Return the beef and any accumulated juices to the pan. Add the salt, black pepper, garlic powder, onion powder, Italian seasoning, chili powder, smoked paprika, and red pepper flakes. Toss until evenly combined and cook for another 1–2 minutes, until heated through.

Reduce the heat to low and stir in the heavy cream. Once warmed through, remove the pan from the heat. Gradually stir in the sharp cheddar cheese until melted and the sauce coats the beef and cabbage.

Taste and adjust the seasoning as needed. Sprinkle with chopped chives and serve warm.

🗒 Variations

Extra veggies: fold in sliced mushrooms or bell peppers with the onion for more texture and flavour.
Different cheese: swap the sharp cheddar for pepper jack if you want some heat, or Monterey Jack for something milder.
Spicier: add extra red pepper flakes or a diced jalapeño along with the onion.
Different protein: ground turkey or ground pork both work in place of beef.

🗒 Substitutions

Ground beef: ground turkey or ground chicken can be used, though the dish will be a bit leaner.
Green cabbage: savoy cabbage or napa cabbage both can work and cook down in a similar way.
Heavy cream: half and half can be used for a lighter sauce (it won’t be quite as rich).
Beef broth: chicken broth or vegetable broth both work in a pinch, though beef broth adds the deepest flavour.
Sharp cheddar: Colby jack or a mild cheddar can be used if you’d prefer a less bold cheese flavour.

🍴 Leftovers? Lucky you.

Leftovers keep well in an airtight container in the fridge for up to three days. Reheat in a pan over medium-low heat with a splash of broth or cream to loosen the sauce, or microwave in 30-second intervals, stirring in between.

🤔 FAQ’s

Is this recipe low-carb?

Yes. Cabbage stands in for pasta here, so this version is much lower in carbs than a traditional hamburger helper while still being just as creamy and satisfying.

Can I make this ahead of time?

It’s best fresh, since the cabbage keeps a bit more texture that way, but it reheats well if you want to prep it a day ahead and warm it up before serving.

Can I freeze cabbage hamburger helper?

You can, though the texture of the cabbage will soften further once thawed. Freeze in an airtight container for up to two months and thaw in the fridge overnight before reheating.

What can I serve with this?

It’s hearty enough to eat on its own, but a side salad or some crusty bread are both great options.
