Some recipes are barely even recipes they’re so easy. That’s what I love about this Burrata with Shaved Tomatoes recipe. It looks like something you’d order a trendy wine bar, but it’s so shockingly simple to throw together. The burrata is soft and rich, the frozen tomato shaves down into this frosty tomato “snow,” and with some flaky salt and good olive oil on top? It’s cold, creamy, salty, and refreshing. All the best parts of summer in one bite.

It’s the kind of burrata appetizer you pull out when you want to impress guests without having to do too much. I’ve made it for casual get-togethers and solo snack boards and it’s always a hit. ✔️ How To Make Burrata with Shaved Tomatoes
- First, place a ripe tomato in the freezer and let it freeze solid — this takes at least 6 hours.
- Next, add the burrata to a serving plate and score the top with a knife.
- Then, use a microplane or fine zester to grate a few tablespoons of the frozen tomato over the top.
- Lastly, finish by drizzling with olive oil, sprinkling over the fresh basil, and adding a pinch of flaky salt.
- Serve immediately with crusty bread if desired.

🤝 Sammy’s Tip
- Make sure your tomato is fully ripe before freezing. Underripe tomatoes won’t grate well or taste great. This burrata recipe is all about using simple (good quality) ingredients that shine.
🗒️ Variations
Tomatoes: You can use whichever type of tomatoes you like, but just know smaller varieties, like cherry tomatoes, will be more difficult to grate.
🗒️ Substitutions
Burrata swap: can’t find it? Use fresh mozzarella as a stand-in.
Bread: swap for gluten-free toast or crackers if needed.
🤔 FAQ’S
Can I prep the tomato ahead of time?
Sure! Keep a tomato stashed in your freezer so you’re ready whenever the craving for burrata with shaved tomatoes hits.
What’s the best way to grate the frozen tomato?
Use a microplane or fine zester. If it starts to get mushy, pop it back in the freezer for 5–10 minutes.
Is this recipe gluten-free?
Yes, just skip the bread or serve with your favourite gluten-free option.
Do I need to thaw the tomato before grating?
Nope! Grate it straight from the freezer. It needs to be solid so you get that fluffy, snow-like texture.
How long should I freeze the tomato?
At least 6 hours or overnight. Keep a few frozen ahead of time so you’re always ready!
🍴 Leftovers? Lucky you.
Burrata with shaved tomatoes is best enjoyed fresh, but if you do have leftovers, pop them in the fridge for up to a day. The burrata might soak up the tomato juices, but it’s still delicious on toast the next day.
