Start by preheating your oven to 375°F. Lightly grease a small baking dish or casserole and set it aside. Prepare your jalapeños by slicing them open, removing the seeds and membranes, and finely chopping the peppers. Set them aside while you get the base of your dip ready.
In a large mixing bowl, add the cream cheese, sour cream, mayonnaise, ranch seasoning, and lime juice. Using a hand mixer, blend on low speed until everything softens and comes together into a smooth, creamy mixture.
🤝 Sammy’s Tips for Jalapeño Popper Dip
- If you’re mixing by hand, just make sure your cream cheese is fully at room temperature so it blends easily.
Once the base is smooth, fold in the chopped jalapeños, canned corn, and 1 cup of the shredded cheddar. Reserve the remaining 1 cup for topping. Stir gently until everything is evenly combined.
Transfer the mixture to your baking dish and spread it out into an even layer. Sprinkle the remaining cheddar over the top, then bake uncovered for 15–20 minutes, or until the edges begin to bubble.
While the dip bakes, place a small pan over medium–high heat. Melt the butter, then add the seasoned breadcrumbs. Stir frequently until the crumbs turn light golden and toasted — this should take about 3 minutes. Remove from the heat and let them cool.
Once the dip is bubbling, remove it from the oven and sprinkle the toasted breadcrumbs overtop. Return the dish to the oven for 5 more minutes, or switch to broil for the last 1–2 minutes if you want an extra-crispy finish.
When it comes out of the oven, top with sliced green onions and serve immediately with tortilla chips.

- 1 8×8 baking dish or similar in size

- 4 medium jalapeños, seeds removed, finely chopped
- 1 ranch seasoning packet, I use a 28 gram packet
- 1 tbsp butter
- 1 cup cream cheese, room temperature
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 cups sharp cheddar cheese, shredded
- 1 cup canned corn
- 1/4 cup seasoned breadcrumbs, toasted
- 1/2 lime, juiced or more to taste
- green onions, to garnish
- tortilla chips, for serving
Instructions
- Preheat your oven to 375 °F.
- Begin by removing the seeds from the jalapeños and chop into small pieces. Set aside until ready to use.
- To a large bowl, add your cream cheese, sour cream, mayonnaise, ranch seasoning packet, and lime juice.
- Using a hand blender, begin to mix on low speed until well combined and smooth. About 2 minutes.Tip: if you don't have a hand blender you can use a large mixing spoon, just make sure your cream cheese is room temperature to make it easier to mix.
- Add your chopped jalapeños, canned corn and 1 cup of cheese.(The other cup will be used to top the dip with).Gently mix to combine.
- Pour the dip into your baking dish, spread evenly and top with the remaining 1 cup of cheese.
- Bake uncovered for 15-20 minutes or until it begins to bubble.
- While the dip bakes, bring a small pan to medium-high heat. Add the butter and breadcrumbs and mix until the crumbs are lightly toasted and golden brown (about 3 minutes). Remove immediately from the heat and set aside to cool until ready to use as a topping.
- Once the dip begis to bubble, remove it from the oven and top with your toasted breadcrumbs.
- Return back to the oven for another 5 minutes.Sammy's tip: for an extra golden and crispy finish, I recommend turning the oven to broil during the final 1 to 2 minutes of baking.
- Top with green onions and serve with tortilla chips.
