Everything bakes together into a bubbly, golden dip that’s perfect for scooping with tortilla chips, crackers, or whatever you’ve got on hand.

Jalapeños: bring the perfect mix of heat and flavour. Removing the seeds keeps things mild, or leave a few in if you like a kick.
Ranch seasoning packet: adds instant savoury depth with zero effort — the herbs, garlic, and onion powder round out the dip.
Butter: to toast the breadcrumbs. It gives them that buttery, golden crunch.
Cream cheese: blends into something smooth, creamy, and perfectly scoopable.
Sour cream: adds tang and lightens the texture so the dip stays rich without feeling heavy.

Mayonnaise: adds silkiness and helps the dip bake into that irresistible, melty consistency.

Start by preheating your oven to 375°F. Lightly grease a small baking dish or casserole and set it aside. Prepare your jalapeños by slicing them open, removing the seeds and membranes, and finely chopping the peppers. Set them aside while you get the base of your dip ready.

In a large mixing bowl, add the cream cheese, sour cream, mayonnaise, ranch seasoning, and lime juice. Using a hand mixer, blend on low speed until everything softens and comes together into a smooth, creamy mixture.

🤝 Sammy’s Tips for Jalapeño Popper Dip

  • If you’re mixing by hand, just make sure your cream cheese is fully at room temperature so it blends easily.

Once the base is smooth, fold in the chopped jalapeños, canned corn, and 1 cup of the shredded cheddar. Reserve the remaining 1 cup for topping. Stir gently until everything is evenly combined.

Transfer the mixture to your baking dish and spread it out into an even layer. Sprinkle the remaining cheddar over the top, then bake uncovered for 15–20 minutes, or until the edges begin to bubble.

While the dip bakes, place a small pan over medium–high heat. Melt the butter, then add the seasoned breadcrumbs. Stir frequently until the crumbs turn light golden and toasted — this should take about 3 minutes. Remove from the heat and let them cool.

Once the dip is bubbling, remove it from the oven and sprinkle the toasted breadcrumbs overtop. Return the dish to the oven for 5 more minutes, or switch to broil for the last 1–2 minutes if you want an extra-crispy finish.

When it comes out of the oven, top with sliced green onions and serve immediately with tortilla chips.

One of my favourite things about this Jalapeño Popper Dip is that you can make it in advance (up to 2 days before serving) and pop it in the oven when guests arrive. Alternatively, if I’m going somewhere and bringing an appetizer, I will heat it up once I arrive.

Equipment

  • 1 8×8 baking dish or similar in size

Ingredients 

  • 4 medium jalapeños, seeds removed, finely chopped
  • 1 ranch seasoning packet, I use a 28 gram packet
  • 1 tbsp butter
  • 1 cup cream cheese, room temperature
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup canned corn
  • 1/4 cup seasoned breadcrumbs, toasted
  • 1/2 lime, juiced or more to taste
  • green onions, to garnish
  • tortilla chips, for serving

Instructions 

  • Preheat your oven to 375 °F.
  • Begin by removing the seeds from the jalapeños and chop into small pieces.
    Set aside until ready to use.
  • To a large bowl, add your cream cheese, sour cream, mayonnaise, ranch seasoning packet, and lime juice.
  • Using a hand blender, begin to mix on low speed until well combined and smooth. About 2 minutes.
    Tip: if you don't have a hand blender you can use a large mixing spoon, just make sure your cream cheese is room temperature to make it easier to mix.
  • Add your chopped jalapeños, canned corn and 1 cup of cheese.
    (The other cup will be used to top the dip with).
    Gently mix to combine.
  • Pour the dip into your baking dish, spread evenly and top with the remaining 1 cup of cheese.
  • Bake uncovered for 15-20 minutes or until it begins to bubble.
  • While the dip bakes, bring a small pan to medium-high heat.
    Add the butter and breadcrumbs and mix until the crumbs are lightly toasted and golden brown (about 3 minutes).
    Remove immediately from the heat and set aside to cool until ready to use as a topping.
  • Once the dip begis to bubble, remove it from the oven and top with your toasted breadcrumbs.
  • Return back to the oven for another 5 minutes.
    Sammy's tip: for an extra golden and crispy finish, I recommend turning the oven to broil during the final 1 to 2 minutes of baking.
  • Top with green onions and serve with tortilla chips.

    1. You can freeze this! Just complete the recipe steps up until it says to bake. Once you are ready to make it, let it thaw and then bake as per the recipe instructions. -Sammy

    This is so good! Everyone loved it. I added 3 slices of crumbled bacon to it because I had it in the frig snd that added a nice smoky flavor to it. This is a keeper!
