My Nonna has an apple tree in her backyard that only produces fruit every two years, but when it does, it really shows off. It feels like each cycle brings double the fruit too. So needless to say, there are always extras to go around. Every time I visit her, I leave with a ton of apples and this Easy Apple Crisp is one of my favourite ways to use them.

A lot of recipes lean heavier on the fruit, which is totally fine, but I’m all about the topping. And this version also has a layer of caramel sauce right in the middle. Brown sugar: rich, sweet, and slightly molasses-y; it caramelizes as it bakes and makes the topping extra delicious.

You can really use whatever apples you’ve got on hand, but I really love using a mix! I usually use Gala or a mixture of Gala and Granny Smith. This combo gives a nice balance. But honestly? Use what you have. This recipe is super accepting of all apples!

To begin, preheat your oven to 375°F. Lightly grease an 8×8-inch baking dish with butter or neutral oil and set aside.
In a medium mixing bowl, add your peeled and chopped apples. Sprinkle in the flour, brown sugar, lemon juice, lemon zest, vanilla, cinnamon, all-spice, nutmeg, and salt. Gently mix everything together until the apples are evenly coated.
Pour the apple filling into the prepared baking dish, then drizzle over a generous layer of caramel sauce. Set aside while you make the crumble topping.
In a separate mixing bowl, combine the oats, flour, brown sugar, cinnamon, all-spice, and salt. Add the cold, chopped butter. Use your hands to rub the butter into the dry mixture until it resembles coarse crumbs with some larger chunks throughout.
Sprinkle the crumble topping evenly over the apple mixture. Use your hands to gently pat it down so it sticks to the apples.
Cover the dish with aluminum foil and bake for 30-35 minutes, or until the filling starts to bubble around the edges.
Remove the foil and bake uncovered for another 10 minutes, or until the topping is golden brown and crisp.

Flour: swap in a 1:1 gluten-free flour blend to make this gluten-free.

Nope! This really comes down to personal preference but if you do keep the skin on the apples, just make sure you wash them really well.
How do I reheat this easy apple crisp?
Just pop it in your oven for 5-8 minutes, or add it to an oven save bowl and bake it in your air-fryer for 3-4 minutes. Alternatively, you can use a microwave for 30-45 seconds.

I cover it with some tin foil and leave it on the counter for up to 4 days, but this hasn’t lasted longer than 2 days in my house!

Add the apple peels to a pot with some water and cinnamon sticks! I honestly love doing this anytime I make apple crisp because it makes your house smell incredible for the entire day and night. Just add those apple peels to a pot, cover the peels with fresh cold water, and then add a couple cinnamon sticks and let it simmer on your stove for 35 to 45 minutes (or longer).

- 3 tbsp brown sugar

Crumble Topping
- 1½ cups old fashioned oats, quick oats can be used, but may result in a slightly different texture
- 3/4 cup butter, cold, chopped into very small pieces
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp all-spice
- 1/8 tsp salt
Optional
- 1/3 cup caramel sauce, layered between the apples and the crumble
- vanilla ice cream, for serving
Instructions
- Pre-heat your oven to 375 °F and grease an 8×8-inch baking dish with butter or neutral cooking oil.
- Begin by preparing the apples: peel and chop then add to a medium sized mixing bowl.Add all of the apple filling ingredients to the apples and gently mix to combine.
- To your prepared baking dish, pour in the apple filling mixture then drizzle with 1/3 cup – 1/2 cup of caramel sauce.Set aside while you prepare your crumble topping.
- To a separate medium sized mixing bowl add all of your crumble topping ingredients.
- Squeeze and work the cold butter into the oat mixture until it is completely incorporated and has a chunky crumb like texture.
- Pour the crumble topping overtop the apple filling and using your hands spread evenly and gently pat into the apple mixture.
- Cover with aluminum foil and bake for 30-35 minutes or until you can see that the apples are beginning to bubble.Remove the aluminum foil and bake for another 10 minutes – or until the top begins to brown.
- Let cool for 5 minutes and serve with vanilla ice cream if desired.

Let me preface this by saying that I made this on a whim using only 5 of those giant supermarket apples (I don’t even know what kind). I peeled them and basically eyeballed the ingredients because I was having a lazy moment and I just wanted a nice dessert and it still turned out amazing.
The caramel addition (I only had caramel sauce) was perfect and it was absolute heaven with vanilla ice cream.
