If there’s a jar of pepperoncini sitting in your fridge door right now, I know exactly what you should do with it. This Pepperoncini Chicken is juicy chicken cutlets in a creamy Parmesan sauce loaded with chopped pepperoncini, capers, and plenty of garlic. It comes together in one pan with ingredients you probably already have. Make it on a busy weeknight, or save it for when people are coming over and you want to put something unexpected on the table.

Chicken breast pieces in a creamy caper and herb sauce in a stainless steel skillet for a quick, easy dinner.

Creamy chicken dinners can get heavy fast, but the pepperoncini keep this one in check. They bring a tangy, mildly spicy bite that cuts right through the cream, so the sauce tastes bright instead of rich and flat. The capers add little salty bursts throughout, which makes this taste a bit like a chicken piccata that woke up one day and decided it wanted to be creamy. Pile it over mashed potatoes, pasta, or rice so you can soak up as much of that sauce as possible. Want more creamy chicken dinners? Try my Creamy Lemon Pasta or Creamy Tuscan Chicken Pasta.

😍 Why You’ll Love This Pepperoncini Chicken

Creamy and tangy at the same time: the pepperoncini and a splash of their brine balance out the Parmesan cream sauce, so it never feels too heavy.
Thin cutlets cook in minutes: slicing the chicken breasts in half means they sear quickly and stay juicy instead of drying out.
One pan from start to finish: the chicken and the sauce are made in the same skillet, so all the flavour from searing ends up in the sauce.
Made mostly from the fridge door and spice cabinet: pepperoncini, capers, broth, and Parmesan are easy to keep on hand, which makes this a great fallback dinner.

🍗 Ingredients You’ll Need To Make This Pepperoncini Chicken

Chicken breasts: three large breasts are sliced in half horizontally to make six thin cutlets that cook quickly and evenly.
Salt: use a light hand here, since the pepperoncini, capers, and Parmesan all add their own saltiness.
Black pepper: a few cracks on both sides of the chicken add a little warmth and bite.
Garlic powder: this seasons the chicken with a savoury garlic flavour.
Onion powder: adds a mellow sweetness to the seasoning.
Italian seasoning: tgives the chicken an easy herby base that pairs well with the pepperoncini.
Smoked paprika: adds gentle smokiness and helps give the cutlets a deep golden colour.
Butter: adds richness and leaves behind browned bits that flavour the sauce.

All-purpose flour: thickens the sauce so it clings to the chicken.
Garlic: gets sautéed right into the sauce for a bold garlic flavour.
Shallot: adds a soft, slightly sweet onion flavour without overpowering.
Pepperoncini: these mild pickled peppers are chopped and stirred into the sauce for a tangy, lightly spicy bite.
Pepperoncini juice: don’t pour it out!
Capers: add small pops of briny, salty flavour that go perfectly with the pepperoncini.

Chicken or vegetable broth: low-sodium broth forms the base of the sauce and keeps the salt level in your control.
Heavy cream: makes the sauce silky and rich while letting the pepperoncini flavour still come through.
Parmesan cheese: finely grated Parmesan melts into the sauce, thickens it, and adds a nutty, salty depth.
Fresh parsley: a sprinkle at the end adds a fresh, green finish and a nice pop of colour.

✔ How To Make This Pepperoncini Chicken Recipe

Begin by preparing your chicken cutlets. Slice the chicken breasts in half horizontally to make 6 thin cutlets total so they cook quickly and evenly.

Lay the cutlets on a large baking sheet. Season both sides with black pepper, garlic powder, onion powder, Italian seasoning, and smoked paprika.

Set a large frying pan over medium-high heat and add the butter. Once melted, add the chicken and sear until nicely browned on both sides. The chicken will finish cooking in the sauce. Transfer to a plate and set aside.

Reduce the heat to medium-low. Add a small splash of olive oil if the pan is dry. Add the shallot and sauté for 1–2 minutes, until softened.

Add the garlic, pepperoncini, and capers and cook for an additional minute.

Sprinkle in the all-purpose flour and mix thoroughly. Cook for 2–3 minutes, stirring frequently, to cook off the raw flour taste.

Add a generous splash of the pepperoncini juice, then slowly pour in the chicken stock whisking until smooth and no flour clumps remain. Bring to a gentle simmer and cook for 1–2 minutes.

Slowly pour in the heavy cream until well combined, and bring to a simmer.

Add the Parmesan cheese and whisk until melted and the sauce begins to thicken.

Return the chicken and any accumulated juices to the pan. Simmer for another 1–2 minutes, or as long as needed for the chicken to cook fully through.

Garnish with fresh parsley and serve right away.

🗒 Variations

Turn up the heat: add a pinch of red pepper flakes with the garlic, or stir in a spoonful of chopped Calabrian chilies.
Add some greens: stir a couple of handfuls of baby spinach into the sauce right before the chicken goes back in and let it wilt down.
Make it a pasta night: slice the cooked chicken and toss everything with short pasta like rigatoni or penne.

🗒 Substitutions

Chicken breasts: boneless, skinless chicken thighs work well here and stay extra juicy. They’ll need a few more minutes in the sauce to cook through.
Shallot: a quarter of a small yellow onion, finely chopped, is an easy swap if you don’t have a shallot.
Capers: chopped green olives give a similar briny flavour if capers aren’t your thing.
All-purpose flour: use a gluten-free all-purpose flour blend to make this gluten-free.

🍴 Leftovers? Lucky you.

Leftovers keep well in an airtight container in the fridge for up to 3 days. The sauce thickens as it sits, so reheat it in a pan over medium-low heat with a splash of broth or water, stirring until the sauce loosens up and the chicken is warmed through. You can also microwave it in 30-second bursts, stirring in between. I don’t recommend freezing this one, since cream sauces tend to separate once thawed.

🤔 FAQ’s

What are pepperoncini?

Pepperoncini are mild, pickled peppers with a tangy, slightly sweet flavour and very little heat. You’ll usually find them in jars near the pickles and olives at the grocery store.

Is pepperoncini chicken spicy?

Not really. Pepperoncini are one of the mildest peppers out there, so the sauce is more tangy than spicy. If you want heat, check out the variations above.

Can I use banana peppers instead of pepperoncini?

Yes. Banana peppers look and taste very similar, though they’re a little sweeter and milder. Jarred banana pepper rings work great here, just give them a rough chop first.

How do I know when the chicken is cooked through?

The safest way is to use a meat thermometer. Chicken is fully cooked when the thickest part reaches 165 °F (74 °C).

My sauce is too thin. How do I fix it?

Take the chicken out and let the sauce simmer for a few more minutes until it reduces. A little extra Parmesan will also help thicken it. If it gets too thick, whisk in a splash of broth until it’s where you want it.

What should I serve with pepperoncini chicken?

Anything that can soak up the sauce is a good call. Mashed potatoes, pasta, rice, and crusty bread are all great options, and a simple green salad or roasted veggies on the side balances everything out.

Everything else you'll need

  • 2 tbsp butter, unsalted
  • 2 tbsp all purpose flour
  • 3 garlic cloves, minced
  • 1 small shallot, finely chopped
  • 3/4 cup pepperoncini, chopped + a splash of the juice
  • 2 tbsp capers
  • 2 cups chicken or vegetable broth, unsalted
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, finely grated
  • 1 tbsp fresh parsley, finely chopped

Instructions

  • Begin by preparing your chicken cutlets. Slice the chicken breasts in half horizontally to make 6 thin cutlets total so they cook quickly and evenly.
  • Lay the cutlets on a large baking sheet. Season both sides with black pepper, garlic powder, onion powder, Italian seasoning, and smoked paprika.
I don't add salt because the pepperoncini brine, the pepperoncinis, and the capers already make it salty enough.
  • Set a large frying pan over medium-high heat and add the butter and a tablespoon of olive oil.
Once melted, add the chicken and sear until nicely browned on both sides. The chicken will finish cooking in the sauce, so don't worry about fully cooking it during this step.
Transfer to a plate and set aside.
  • Reduce the heat to medium-low. Add a small splash of olive oil if the pan is dry. Add the shallot and sauté for 1–2 minutes, until softened.
  • Add the garlic, pepperoncini, and capers and cook for an additional minute.
For a milder kick, remove some of the pepperoncini seeds before cooking.
  • Sprinkle in the all-purpose flour and mix thoroughly. Cook for about 2 minutes, stirring frequently, to cook off the raw flour taste.
  • Slowly pour in the chicken stock whisking until smooth and no flour clumps remain. Bring to a gentle simmer and cook for 1–2 minutes.
  • Slowly pour in the heavy cream and mix until well combined, then bring to a simmer.
  • Add the Parmesan cheese and whisk until melted and the sauce begins to thicken. Taste to see if you need to add any salt.
If it needs more salt, I add a tablespoon or two of pepperoncini brine instead.
  • Return the chicken and any accumulated juices to the pan. Simmer for another 1–2 minutes, or as long as needed for the chicken to cook fully through.
  • Garnish with fresh parsley and serve right away.
