Everything cooks in a single pan (and isn’t that the best?!)—sweet bell peppers, golden crispy potatoes, and juicy Italian sausage all together to make a truly satisfying dinner that smells amazing and tastes even better.

Olive oil: Just enough to get everything going and help the potatoes color in the pan.
Yellow potatoes: Yellow potatoes hold their shape well and have a buttery flavor that works great here.
Italian sausage links: Cooking them in the same pan as the peppers and potatoes means all that rendered fat picks up the flavor already in the pan.

Bell peppers: Use a mix of colors if you want it to look extra vibrant, but any color works.
Garlic: They mellow out as they cook and add a subtle, sweet garlic flavor throughout.
Red pepper flakes: It adds just enough heat to balance the sweetness of the peppers.

Begin by removing the casings from your Italian sausage and chopping it into bite-sized pieces.

Next, prepare your bell peppers by slicing them into strips and set aside. Peel and thinly slice your potatoes then set those aside as well.

Heat a large frying pan over medium heat and add the olive oil. Add the sliced peppers, garlic and red pepper flakes and cook for about 7 minutes until they soften. Add the chopped potatoes and cook for another 5-7 minutes, or until the potatoes are nearly cooked.

Push the peppers and potatoes to one side of the pan. Add the sausage pieces to the center and cook until crispy and fully cooked. About 6 minutes.Mix everything together.

Remove the garlic cloves and discard. Finally, garnish with fresh basil and serve with bread.

Add onion: A sliced yellow or red onion cooked down with the peppers adds sweetness and bulk.
Spicy sausage: Swap mild Italian for hot Italian sausage if you want more heat throughout.

Leftovers keep well in an airtight container in the fridge for up to three days. To reheat, warm in a skillet over medium heat with a small drizzle of olive oil for about 5 minutes, stirring until heated through. Do I have to remove the sausage casings?

Yes, removing the casings lets you break the sausage into irregular, bite-sized pieces that brown better and mix into the dish more naturally than whole sliced links would.

Can I use a different type of potato?

Yukon Gold or red potatoes both work well. Just make sure they’re chopped small enough to cook through in the same time as everything else in the pan.

My potatoes are taking longer to cook than expected. What do I do?

Add a small splash of water to the pan and cover it for a few minutes. The steam will help them cook through faster without burning the outside.

Can I make this ahead of time?

It’s best fresh, but you can prep everything in advance—remove the casings and chop the sausage, slice the peppers, and chop the potatoes, then store them separately in the fridge until you’re ready to cook.

What should I serve this with?
