One Skillet Fried Sausage, Potatoes & Peppers

  • 1 Large frying pan

Ingredients

  • 2 tbsp olive oil extra virgin
  • 3 yellow potatoes peeled, finely chopped
  • 4 Italian sausage links chopped into bite sized pieces
  • 3 large bell peppers sliced
  • 2 garlic cloves whole, peeled
  • 1/4 tsp red pepper flakes
  • fresh basil to garnish, optional

Instructions

  • Begin by removing the casings from your Italian sausage and chopping into bite-sized pieces.
  • Next, prepare your bell peppers by slicing them into strips and set aside.
  • Peel and thinly slice your potatoes then set those aside as well.
  • Heat a large frying pan over medium heat and add the olive oil.
    Add the sliced peppers, garlic and red pepper flakes and cook for about 7 minutes until they soften.
    Add the chopped potatoes and cook for another 5-7 minutes, or until the potatoes are nearly cooked.
  • Push the peppers and potatoes to one side of the pan.
    Add the sausage pieces to the center and cook until crispy and fully cooked. About 6 minutes.
    Mix everything together then taste to see if you want to add salt.
  • Remove the garlic cloves and discard.
  • Finally, garnish with fresh basil and serve with bread.
