One Skillet Fried Sausage, Potatoes & Peppers

- 2 tbsp olive oil extra virgin
- 3 yellow potatoes peeled, finely chopped
- 4 Italian sausage links chopped into bite sized pieces
- 3 large bell peppers sliced
- 2 garlic cloves whole, peeled
- 1/4 tsp red pepper flakes
- fresh basil to garnish, optional
Begin by removing the casings from your Italian sausage and chopping into bite-sized pieces.
Next, prepare your bell peppers by slicing them into strips and set aside.
Peel and thinly slice your potatoes then set those aside as well.
Heat a large frying pan over medium heat and add the olive oil. Add the sliced peppers, garlic and red pepper flakes and cook for about 7 minutes until they soften. Add the chopped potatoes and cook for another 5-7 minutes, or until the potatoes are nearly cooked. Push the peppers and potatoes to one side of the pan. Add the sausage pieces to the center and cook until crispy and fully cooked. About 6 minutes.Mix everything together then taste to see if you want to add salt. Remove the garlic cloves and discard.
Finally, garnish with fresh basil and serve with bread.
