Overnight French Toast Casserole is the ultimate stress-free, make-ahead breakfast. Layered with brioche bread, soaked in a vibrant orange, blueberry and vanilla egg mixture. Topped with my homemade cinnamon whipped cream, this is the perfect recipe for the holidays, a special breakfast or brunch.

It’s become a tradition where I whip up my Batch Espresso Martinis and French Toast Casserole the night before Christmas. According to my kids “it’s the best breakfast ever”. Well not the martinis, just the casserole. After all, it’s layered with brioche brad, soaked in a vibrant orange, blueberry and vanilla egg mixture, topped with my cinnamon whipped cream. Although we tend to make this recipe over the holidays, it’s perfect for busy mornings or when entertaining larger crowds. Not to mention, you don’t need to deal with the hassle of cooking over the stove while your guests arrive.

French Toast Casserole

Overnight French Toast Casserole is the ultimate stress-free, make-ahead breakfast. Layered with brioche bread, soaked in a vibrant orange, blueberry and vanilla egg mixture. Topped with my simple homemade cinnamon whipped cream.

Cook: 45 minutes
Resting Time: 10 minutes
Servings: 8 servings

Ingredients 

  • 1 loaf brioche bread, 1-2 days old, cut into 1 inch cubes
  • 1 cup blueberries, fresh or frozen
  • 7 eggs
  • cups milk, 2%
  • 1/2 cup orange juice, freshly squeezed, about 1 large navel orange
  • 1 tbsp orange zest
  • 3 tbsp maple syrup
  • 3/4 cup brown sugar
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp salt

Cinnamon Whipped Cream

  • 2 cups whipping cream (473 mL carton), 33%
  • 1 tbsp vanilla
  • 3 tbsp sugar, add more if you want it sweeter
  • 1 tsp cinnamon

Instructions 

  • Grease a 9×13" baking dish with butter or cooking oil.
  • Cut the bread into 1 inch cubes and add to the baking dish.
  • Next, add the blueberries on top of the bread cubes.
  • To a large mixing bowl add the eggs, milk, orange juice, orange zest, maple syrup, brown sugar, vanilla, cinnamon and salt.
    Whisk together until well combined.
  • Pour evenly over the bread cubes.
  • Gently press the bread cubes into the egg mixture, ensuring that each piece is submerged into the liquid.
    Cover with aluminum foil and refrigerate overnight.
  • Preheat your oven to 375 °F.
    Bake until casserole is browned, bubbling, and set. About 35-45 minutes.
    Cover with aluminum foil if the top or edges appear to be browning too quickly.
  • Allow the casserole to rest for 10 minutes before slicing and serving.
  • To prepare the whipped cream, use a handheld or stand mixer and mix together the heavy cream, vanilla, sugar and cinnamon on medium speed for 1 minute.
  • Increase the speed to medium/high and continue beating until stiff peaks form.
  • Top the casserole with a generous scoop of cinnamon whipped cream and maple syrup.
  • Enjoy!
