To make this pasta, start by preheating your oven to 425°F. Place the Boursin in the centre of a large baking dish.
Next, add the whole cherry tomatoes around the Boursin. Drizzle them with olive oil, then sprinkle on the minced garlic, red pepper flakes, dried oregano, salt, and black pepper. Gently toss the tomatoes so they’re fully coated in the oil and seasonings.
Once everything is prepped, bake the dish for 15–20 minutes, or until the tomatoes begin to burst and can be easily smashed with a fork.

While the tomatoes roast, bring a large pot of salted water to a boil. Cook your pasta until al dente, making sure to reserve at least ¼ cup of pasta water before draining.
When the tomatoes are soft and jammy, carefully remove the baking dish from the oven. Add the cooked pasta and fresh basil directly into the dish, then gently toss to combine.
Finish by pouring in 2 tablespoons of the reserved pasta water to help the sauce come together. Add a little more if you prefer a looser, silkier sauce.

Ingredients
- 250 grams penne, or pasta of choice, similar in size
- 1/4 cup reserved pasta water
- 2 tbsp olive oil, extra virgin
- 2½ cups cherry tomatoes, whole
- 4 garlic cloves, minced
- 1 150 gram boursin
- 1/2 tsp red pepper flakes
- 1/4 tsp dried oregano
- 1-2 tbsp fresh basil, finely chopped
- 2 tbsp parmesan cheese, finely grated, to garnish
- salt, to taste
- black pepper, to taste
Instructions
- Begin by preheating your oven to 425 °F.
- Next, to a large baking dish (I use a 9×13) add your Boursin directly into the centre.
- Surround the Boursin with the whole cherry tomatoes then drizzle the tomatoes with olive oil, garlic, red pepper flakes, dried oregano, and salt and pepper to taste.Gently toss the tomatoes so that they are completely coated with the olive oil and seasonings.
- Bake uncovered for 15-20 minutes or until the tomatoes start to burst open and you can easily smash them with a fork. Be very careful when poking the tomatoes as they can release some of their juices and its very hot.*some ovens may take slightly longer than 15-20 minutes – just keep an eye on the tomatoes.
- While the tomatoes are roasting, bring a pot of salted water to a boil and cook your pasta until al dente. Be sure to reserve at least 1/4 cup of pasta water.
- Once your tomatoes are bursting open and easy to pierce them with a fork, carefully remove from the oven.Smash, half-smash, or leave tomatoes whole based on your desired final texture.
- Add in the cooked pasta and fresh basil and gently toss to combine.
- Begin by adding 2 tablespoons of reserved pasta water and work your way up if you want a thinner sauce.
- Garnish with parmesan cheese and enjoy.

I baked frozen, breaded chicken tenders alongside the tomato/cheese mixture, then chopped them into pieces and added them to the finished tomato/pasta mixture. Leftover rotisserie chicken would be good also!

This is one of my husband’s and my favorite dinners. It’s so quick and easy, and it comes out delicious every time. I’ve made it so many times that I’ve started experimenting with adding other ingredients, like sliced mushrooms or different pasta. It never disappoints!

I don’t recommend freezing this one. I find the cheese becomes gritty and overall just doesn’t freeze well.

I added Basil and didn’t follow the recommended amount of red flakes. Will foolow the recipe next time. It was still an easy and beautiful end result.
Amazing and super easy to throw together on a night you either don’t have time or energy to do more. The only comment is that it doesn’t say when to add the oregano or crushed red pepper so I wing it and throw it in when it goes in the oven.

Seems adaptable, too – like, I chopped up zucchini and cooked it with the tomatoes, but will try spinach and other things next time.
