🫐 Why you’ll love Overnight Blueberry French Toast Casserole

Easy to make ahead: Prepare this one the day before and bake it the next morning.
Versatile: Top with your favourites fruits: blueberries, strawberries or raspberries all work well.
Freezer friendly: Although I prefer this recipe fresh, it is freezer friendly. Before baking, cover with aluminum foil and freeze for up to 6 weeks. Thaw overnight in the fridge and bake as per recipe instructions.

🍞 Ingredients You’ll Need To Make Overnight Blueberry French Toast Casserole

Brioche Bread: This bread is perfectly sweet and rich for a recipe like this, though you can use other sturdy breads such as challah or sourdough.
Blueberries: Fresh or frozen, they burst with sweet and tart flavor, adding pockets of warmth throughout the casserole.
Eggs: A foundational ingredient, they create the custard base and help bind all the components together.
Milk (2% or your choice): This helps keep the casserole moist and contributes to a creamy, rich texture.

Orange Juice (preferably freshly squeezed): This provides essential brightness and a light zesty note that cuts through the richness of the bread and custard.
Orange Zest: The zest adds an intense aromatic flavor, playing up the brightness of the orange juice in the French toast.
Maple Syrup: Used to drizzle over the custard mixture, it adds a deep, complex sweetness.
Brown Sugar: This adds a molasses-rich sweetness and helps create a lovely caramelized topping.
Vanilla Extract: A splash of vanilla helps give the entire casserole a perfectly sweet and warming flavor profile.
Cinnamon: This classic spice adds warmth and depth, providing the perfect seasoning for a French toast dish.

A white bowl filled with whipped cream, topped with a light dusting of cinnamon, sits on a light wooden surface—perfect for serving alongside your favorite Blueberry French Toast Casserole Recipe.

👩🏻‍🍳 How to make Blueberry French Toast Casserole

  1. Prepare Bread and Fruit: Cut the brioche into 1-inch cubes and place them in a 9×13 inch baking dish. Scatter the blueberries (fresh or frozen) over the top.
  2. Make the Custard: In a large bowl, whisk together the eggs, milk, orange juice, orange zest, maple syrup, brown sugar, vanilla extract, cinnamon, and salt until the mixture is smooth.
  3. Assemble and Chill: Pour the custard evenly over the bread cubes. Gently press the cubes to ensure they are fully submerged. Cover the dish and refrigerate overnight (or for at least 6 hours).
  4. Bake: Preheat your oven to 375°F (190°C). Bake the casserole for 35–45 minutes until golden brown, bubbling, and fully set. Cover loosely with foil if the edges brown too quickly.
  5. Serve: Let the casserole rest for 5–10 minutes. Slice and top with powdered sugar or whipped cream, if desired.

🤝 Tips

Prep Ahead: To truly enjoy a stress-free morning, fully assemble the casserole the night before.
Whipped Cream: Elevate the dish by making homemade whipped cream—it requires only a few ingredients and can be prepared a day in advance! My homemade cinnamon whipped cream is easy and so delicious.
Ingredients: Get creative! Substitute blueberries with other berries like strawberries or raspberries, or swap orange zest for lemon zest.
Use Stale Bread: Slightly day-old or dried-out bread works best, as it holds its shape better and absorbs the liquid without becoming overly soggy.

🗒️ Substitutions

  • swap blueberries for strawberries, raspberries or blackberries.
  • swap the brioche bread for white bread or sourdough.

🍴 Leftovers? Lucky you.

Store any leftover French toast casserole pieces in an airtight container and refrigerate for up to 2 days.

Can I use a different type of bread?

Certainly! While brioche is highly recommended, alternatively you can use challah or sourdough. However, the main tip is to ensure the bread is a thicker cut.

How long can I store the leftovers?

Firstly, allow the casserole to cool down entirely. Then, cover with plastic or place in an airtight container and refrigerate for up to 2 days. Reheat in the microwave or oven until warm throughout.

Is this recipe freezer friendly?

While freezing is possible, the texture may change slightly. To freeze, allow the casserole to come to room temperature. Next, cover tightly with plastic wrap, then freeze for up to 2 months. To cook, thaw overnight in the refrigerator, then bake according to recipe instructions.

Can I use dairy free milk?

Certainly – almond and oat milk work great as alternatives.
