Peanut Butter Marshmallow Squares

These easy no-bake Peanut Butter Marshmallow Squares are one of my favourite childhood treats. They require only a few simple ingredients such as rainbow mini marshmallow, peanut butter, and butterscotch chips which is truly a match made in heaven.

Ingredients

  • 1/2 cup butter salted
  • 1 cup peanut butter smooth or crunchy
  • 1 package butterscotch chips (300 grams per bag) or chocolate
  • 1 bag mini marshmallows (250 gram bag) white or rainbow
  • 1 tsp vanilla extract

Instructions

  • Begin by putting your bags of mini marshmallows in the freezer while you prepare everything.
    If you can, leave your marshmallows in the freezer for 45 minutes before preparing this recipe.
    This will help the marshmallows hold their shape and avoid melting when added to the chocolate and peanut butter mixture.
  • To a large pot, add your butterscotch chips and begin melting on low heat, stirring often to avoid the chocolate from burrning.
  • Once the chocolate is 75% melted (about 2-3 minutes), add your peanut butter and cook for another 2 minutes on low heat, stirring often.
  • Add your butter and vanilla and continue mixing on low heat until everything is incorporated and smooth. About 2 minutes.
  • Remove mixture from heat and let cool for 5 minutes.
  • Prepare a large baking dish with parchment paper and set aside.
  • Add in your marshmallows from the freezer.
    Fold the marshmallows gently into the mixture until just combined.
  • Add your marshmallow mixture to the prepared baking dish, spread evenly, and cover with plastic wrap and refrigerate for at least 1.5 hours, or overnight.
  • Cut into desired sized squares and enjoy!
