One Pan Caramelized Onion Pasta

This one-pan caramelized onion dish is all about letting the oven do the work: the onions slowly roast until deeply golden, sweet, and jammy. Tossed with a simple cream sauce and al dente pasta.

Ingredients

  • 3 cups small pasta of choice cooked, about 200 grams
  • 1 cup reserved pasta water
  • 3 large yellow onions thinly sliced
  • 1/4 cup olive oil + 1 tsp to the garlic
  • 1 bulb garlic
  • 1/2 cup heavy cream 33%
  • 1 tbsp soy sauce
  • 1/3 cup parmesan cheese finely grated
  • 1/2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/4 tsp black pepper
  • 1 tsp salt
  • 3 tbsp fresh parsley

Instructions

  • Preheat your oven to 400°F.
  • Peel the onions and slice them very thinly using a mandoline or sharp knife.
    Transfer to a large oven safe baking dish.
    Add the olive oil to the onions and toss well to coat.
    Add the Italian seasoning, smoked paprika, onion powder, garlic powder, red pepper flakes, black pepper, and salt. Toss until the onions are evenly coated.
  • Slice the top off the garlic bulb to expose the cloves.
    Place it in the centre of the baking dish.
    Drizzle the exposed cloves with 1 teaspoon olive oil and season with salt.
  • Cover the dish tightly with foil.
    Bake for about 60 minutes, tossing the onions halfway through, until deeply golden and caramelized.
    When you toss as the halfway mark, add the soy sauce and gently toss to combine.
  • When about 15 minutes of bake time remains, cook the pasta according to package directions. Reserve up to 1 cup of pasta water, then drain the pasta and set aside until ready to use.
  • Remove the baking dish from the oven. Let the garlic cool slightly, then squeeze the roasted cloves into the onions. Using a fork, gently mash the roasted garlic into the onions.
  • Heat the heavy cream and milk in a saucepan until warm.
    Pour over the onions then add the parmesan cheese.
    Toss until smooth and combined.
  • Add the cooked pasta and fresh parsley. Toss well to coat. Add 1/4 cup of reserved pasta water at a time to thin out the sauce is preffered.
  • Garnish with more parmesan cheese and enjoy right away!
