Ingredients

Tahini Sauce

  • 1/2 cup tahini
  • 1 lemon juiced, about 1/4 cup
  • 3 garlic cloves minced
  • 1 tbsp maple syrup
  • 2-3 tbsp cold water to thin the sauce
  • salt to taste

Ground Beef

  • 650 grams lean ground beef
  • 1 tbsp seven spices or a mix of black pepper, all spice, cinnamon, cloves, nutmeg, cumin and coriander
  • 1/2 tsp salt

Extras

  • 6 pitas warmed
  • 2 cups romaine lettuce roughly chopped
  • 1 cucumber roughly chopped
  • 1 large tomato roughly chopped
  • 1 small red onion finely sliced
  • 1 cup feta cheese crumbled

Instructions

  • Prepare the tahini sauce: Add the tahini, lemon juice, garlic cloves, maple syrup, cold water, and salt to a small food chopper. Pulse until smooth.
Alternatively, finely mince the garlic and whisk everything together in a mixing bowl. Add more cold water, 1 tablespoon at a time, until the sauce reaches your desired consistency. Set aside.
  • Prepare the toppings: Chop the romaine lettuce, cucumber, tomato, and onion, and crumble the feta cheese. Set aside for assembly.
  • Prepare the beef: Add the lean ground beef, seven spice blend, and salt to a mixing bowl. Mix with your hands until evenly combined, then divide into six equal balls.
  • Cook the burgers: Heat a drizzle of your preferred oil in a large frying pan or on a griddle over medium-high heat. Working in batches, add the beef balls and use a burger press or the flat bottom of a sturdy, heavy pot to press each one into a very thin patty. Cook for approximately 1–2 minutes per side, or until cooked through. Repeat with the remaining beef.
  • Assemble and serve: Add a beef patty to each warmed pita, top with the prepared vegetables and feta, and drizzle with tahini sauce.
  • Enjoy right away!
