Ingredients

  • cups cake flour
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 1/2 cup water
  • 1/2 cup butter (125 grams)
  • 2 tsp fresh ground ginger
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  • Preheat the oven to 350℉ (176℃).
  • Prepare the baking dish by greasing it thoroughly, then lightly flouring the bottom and sides. Tap out any excess flour.
  • In a large mixing bowl, whisk together the cake flour, baking soda, nutmeg and cloves. Set aside
  • In a small pan over low heat, combine honey, water and butter and stir until the butter is just melted.
  • Pour the honey mixture into the dry ingredients along with the fresh ginger.
    Whisk until smooth and well combined.
  • Pour the batter into the prepared baking dish and transfer to the oven.
    Bake until the cake is set and a toothpick inserted into the centre comes out clean. Approx 30 - 35 minutes.
  • Allow the cake to cool before cutting into squares.
    Dust with icing sugar just before serving.
