Fried Sausage & Pepper Orzo

Fried Sausage & Pepper Orzo is made in one pot and is ready in less than 30 minutes. Combining savoury crispy sausage with sweet fried red peppers and perfectly tender orzo.

Ingredients

  • 2 tbsp olive oil extra virgin
  • 3 garlic cloves minced
  • 2 red peppers sliced
  • 1 small yellow onion sliced
  • 4 Italian sausage links cut into bite sized pieces
  • cups orzo
  • cups chicken stock low sodium
  • 1 cup mozzarella shredded
  • parmesan optional to garnish
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano
  • handful fresh basil

Instructions

  • Begin by preparing the garlic, red peppers, and onions.
    Set aside until ready to use.
  • Remove the casings from the Italian sausage and chop into bite sized pieces.
    Set aside until ready to use.
  • To a large frying pan set to medium heat, add the olive oil.
    Add the red peppers and onions and cook for 2-3 minutes, just until sofened.
  • Add the garlic and spices and sauté for an additional minute.
    Sammys tip: if you are using a salted chicken stock, skip the added salt.
  • Add the chopped Italian sausage and fry for 3 to 4 minutes just until the sausage begins to brown.
  • Add the orzo and allow it to toast in the pan for a minute before adding the chicken stock.
  • Add the chicken stock and a handful of fresh basil.
  • Reduce heat to low/simmer, cover and let cook for 15-20 minutes, or until the orzo is cooked and the majority of the chicken stock has been absorbed.
    Remove the lid during the last 5 minutes of cook time.
    Sammy's tip: stir every 5 minutes or so to ensure the orzo doesn't stick to the bottom of the pan.
  • Once the orzo is cooked and the stock has been absorbed, add the shredded cheese and mix until melted.
    Taste here to see if you need to add more salt.
  • Garnish with parmesan cheese and enjoy right away.
