Creamy Cucumber Salad

Ingredients

  • 8 mini cucumbers thinly sliced
  • 1 small red onion thinly sliced, or 1/2 of a large red onion
  • 1/2 cup sour cream or greek yogurt
  • 1/4 cup mayonnaise
  • 1 large garlic clove minced
  • 1/4 cup fresh dill chopped
  • 1/2 lemon juiced
  • 1/4 tsp salt or more to taste

Instructions

  • Using a mandolin or a sharp knife, slice the cucumbers and red onion into very thin, even slices. Set them aside until you’re ready to combine everything.
  • In a large bowl, whisk together the sour cream, mayonnaise, garlic, fresh dill, lemon juice, salt and pepper.
  • Add the sliced cucumbers and red onion, then gently toss everything together to combine evenly.
    Taste here to see if you want to add more salt.
  • Because cucumbers release a lot of moisture, this salad is best enjoyed right away. If you want to prep ahead, simply whisk the dressing in advance and wait to toss everything together just before serving.
