Cinnamon Coffee Cake

Equipment

Ingredients

  • cups all purpose flour
  • 1 cup granulated sugar
  • cups buttermilk
  • 3/4 cup+ 1 tbsp salted butter 185 grams
  • 2 large eggs room temperature
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon

Cinnamon Crumble Topping

  • 1/4 cup all purpose flour
  • 3 tbsp cold butter cubed into 1/4 inch pieces
  • 2 tbsp light brown sugar packed
  • 2 tbsp granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 cup walnuts finely chopped
  • confectioners’ sugar (powdered sugar) optional, used as part of the glaze
  • milk optional, used as part of the glaze

Instructions

  • Preheat your oven to 350°F (176°C).
    Grease a 9-inch square baking pan, then lightly flour the pan, tapping out any excess. Alternately, line the baking pan with parchment paper.
  • In a bowl, sift together the flour, baking powder, baking soda and cinnamon. Set aside.
  • Using an electric or stand mixer, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • Stir in half of the flour mixture and half of the buttermilk and mix until just combined. Add the remaining flour mixture and buttermilk, mix or stir gently until the batter is smooth. Do not overmix.
  • Spread the batter evenly into the prepared baking pan.
  • Prepare the crumble: pulse the all purpose flour, sugars, cinnamon, and cold cubed butter until it looks like coarse sand, then pulse in walnuts just once or twice.
    Break up any big clumps by hand, sprinkle evenly on the cake batter, then bake until a toothpick comes out clean, 45-60 minutes.
  • Optional: For the glaze, whisk together confectioners’ sugar (powdered sugar) and a splash of milk until you reach your desired consistency. Drizzle over the cooled coffee cake.
