Chocolate Zucchini Bread

1 large mixing bowl
- 2/3 cups neutral oil canola or vegetable oil
- 2 cups shredded zucchini
- 1½ cups all purpose flour
- 1/2 cup cocoa powder
- 1 cup brown sugar
- 2 large eggs whisked
- 2 tsp vanilla extract
- 1/2 cups chocolate chips milk or semi sweet
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp cardamon
- 1/2 tsp salt
Preheat your oven to 350°F (175°C). Grease and flour a loaf pan and set aside.
In a large bowl, whisk together the oil, shredded zucchini and brown sugar until well combined.
In a small bowl, whisk the eggs. Add the eggs and vanilla to the zucchini mixture and stir until fully incorporated.
Over the same bowl, sift together the all purpose flour, cocoa powder, baking powder, baking soda, cinnamon, ground cloves, cardamom and salt.
Gently mix until the dry ingredients are just incorporated and the batter is smooth, then add the chocolate chips. Do not overmix. Pour the batter into the prepared loaf pan.
Bake for approximately 60 -65 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the loaf to cool completely in the pan before removing.
Slice, serve and enjoy.
