Ingredients

  • 1 150 gram Boursin cheese I use garlic & fine herbs flavour - you can also use the 250 gram option
  • cups cherry tomatoes
  • 4 garlic cloves minced
  • 1 tbsp olive oil
  • salt
  • pepper
  • fresh basil optional for garnish
  • baguette or crackers for serving

Instructions

  • Preheat your oven to 425 °F.
  • To an oven safe baking dish, add the Boursin to the middle, surrounded by the cherry tomatoes, minced garlic, olive oil, and a pinch of salt and pepper.
    If you’d like a thicker, creamier dip, use either the larger 250 gram Boursin or simply add two of the 150-gram Boursins for extra richness.
  • Bake uncovered for 30-40 minutes, just until the tomatoes begin to burst open and the dip bubbles.
    Sammy's tip: halfway through cooking, use a fork and press down a few of the tomatoes to release their juices.
  • Remove from the oven, mix to combine and top with fresh basil.
  • Serve with crackers, chips or toasted crostini.
