- 1 150 gram Boursin cheese I use garlic & fine herbs flavour - you can also use the 250 gram option
- 3½ cups cherry tomatoes
- 4 garlic cloves minced
- 1 tbsp olive oil
- salt
- pepper
- fresh basil optional for garnish
- baguette or crackers for serving
Preheat your oven to 425 °F.
To an oven safe baking dish, add the Boursin to the middle, surrounded by the cherry tomatoes, minced garlic, olive oil, and a pinch of salt and pepper. If you’d like a thicker, creamier dip, use either the larger 250 gram Boursin or simply add two of the 150-gram Boursins for extra richness. Bake uncovered for 30-40 minutes, just until the tomatoes begin to burst open and the dip bubbles.Sammy's tip: halfway through cooking, use a fork and press down a few of the tomatoes to release their juices. Remove from the oven, mix to combine and top with fresh basil.
Serve with crackers, chips or toasted crostini.
