Ingredients

  • 1/2 cup butter unsalted
  • 2 eggs
  • 3 ripe bananas mashed
  • 3/4 cup brown sugar packed
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract optional
  • cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 3/4 cup mini chocolate chips optional

Instructions

  • Preheat your oven to 375 °F and line a 9x5 loaf pan with parchment paper or spray with cooking spray.
  • Brown the butter: in a small saucepan, melt the butter over medium heat.
    Continue cooking, swirling occasionally, until it turns golden brown and gives off a nutty aroma. This usually takes between 5-7 minutes.
    Remove from heat and let it cool for a few minutes while you prepare everything else.
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  • In a separate large mixing bowl, whisk together the browned butter and brown sugar until smooth and free of lumps.
  • Add eggs one at a time, whisking well after each addition.
    Stir in vanilla extract, almond extract, and mashed bananas and mix until combined.
  • Gradually add the dry ingredients to the wet mixture, folding in gently until just combined, then fold in the chocolate chips.
  • Bake for 45-55 minutes, or until a toothpick inserted into the centre comes out clean.
  • Slice, serve and enjoy!
