- 1/2 cup butter unsalted
- 2 eggs
- 3 ripe bananas mashed
- 3/4 cup brown sugar packed
- 1 tsp vanilla extract
- 1/4 tsp almond extract optional
- 1½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 3/4 cup mini chocolate chips optional
Preheat your oven to 375 °F and line a 9x5 loaf pan with parchment paper or spray with cooking spray.
Brown the butter: in a small saucepan, melt the butter over medium heat. Continue cooking, swirling occasionally, until it turns golden brown and gives off a nutty aroma. This usually takes between 5-7 minutes.Remove from heat and let it cool for a few minutes while you prepare everything else. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
In a separate large mixing bowl, whisk together the browned butter and brown sugar until smooth and free of lumps.
Add eggs one at a time, whisking well after each addition.Stir in vanilla extract, almond extract, and mashed bananas and mix until combined. Gradually add the dry ingredients to the wet mixture, folding in gently until just combined, then fold in the chocolate chips.
Bake for 45-55 minutes, or until a toothpick inserted into the centre comes out clean.
