Baked Brie with Jam, Walnuts & Rosemary

This baked brie melts into a creamy dream under a layer of delicious jam, toasted walnuts, and rosemary, finished with a drizzle of honey that ties everything together.

Equipment

  • 1 brie baker or a baking dish similar in size to your brie

Ingredients

  • 1 large brie I use 600 grams
  • 3 tbsp apricot jam blueberry or fig are great alternatives
  • 1/3 cup toasted walnuts chopped
  • 1 tbsp honey
  • 1 tbsp fresh rosemary chopped fine
  • crostini/crackers/fruit for serving

Instructions

  • Preheat your oven to 400 °F.
  • Score the top surface of the brie by slicing horizontally and then vertically, creating a grid of small cubes. Do not cut all the way through to the bottom rind.
  • Add your brie to an oven safe serving dish (for easy serving and spreading use an oven-safe dish similar in size to your brie or a dedicated brie baker) and bake for 10-12 minutes.
    Bake until the edges of the wheel visibly bulge and the top rind has just begun to turn a very light golden colour. The cheese should be creamy and melted inside but still hold its shape.
    Avoid overcooking, as you need the cheese to maintain its wheel shape for spreading the jam.
  • In a small saucepan, warm the jam over low heat for 1 to 2 minutes to soften it slightly, which makes it easier to spread smoothly over the warm brie.
  • Once the brie is finished in the oven, gently spread over the jam.
    Sammy's tip: if the brie has softened past the point of holding its shape, simply dollop the warm jam directly over the melted brie and serve.
  • Garnish with toasted walnuts, a drizzle of honey and fresh rosemary.
  • Serve with crackers, crostini or crisp green apples.
  • For reheating or if the brie cools too quickly, the entire dish—jam, nuts, and all can be placed back in the oven for a few minutes until warm throughout.
