Bacon Wrapped Water Chestnuts

Salty, smoky bacon is wrapped around crisp water chestnuts, then brushed with a sticky homemade molasses BBQ sauce and baked until caramelized and crispy.

Ingredients

Bacon Wrapped Water Chestnuts

  • 1 375 gram pack bacon cut in half
  • 1 227 mL can water chestnuts whole, drained - or approximately 22 water chestnuts

Homemade BBQ Sauce

  • 1/2 cup ketchup
  • 1 tbsp apple cider vinegar
  • 2 tbsp molasses
  • 1 tbsp worcestershire sauce
  • 2 tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp mustard powder
  • pinch of salt and pepper

Instructions

  • Prepare the BBQ sauce: in a small saucepan, combine all the BBQ sauce ingredients.
    Whisk everything together over medium heat until the sugar is dissolved and the sauce is well combined.
    Let it simmer for 5-7 minutes, stirring occasionally, until it thickens slightly.
    Remove from heat and let it cool while you prepare everything else.
  • Preheat the oven: to 400°F and line a large baking dish with aluminum foil.
  • Assemble: slice each piece of bacon in half, then place one water chestnut at one end of the bacon slice and roll it up securely.
    Secure with a wooden toothpick and place seam-side down on the baking sheet.
    Repeat until all of the water chestnuts have been used.
  • Add the BBQ Sauce: generously brush each bacon-wrapped water chestnut with barbecue sauce, and reserve a bit of sauce to brush on again halfway through cooking.
  • Bake: place in the oven and bake for 10 minutes. Then, remove and brush on the remaining barbecue sauce and bake for another 10-13 minutes, or until the bacon is fully cooked.
  • Cool: let them cool on the baking tray for about 5 minutes, serve and enjoy.
