4 steps to make Taco Stuffed Baked Potatoes

  1. Bake your potatoes: wash, scrub, cover with foil and bake for 45-60 minutes.
  2. Cook your meat: fry until browned, draining any excess fat if needed.
  3. Add the taco seasoning: make your own or use a store-bought variety.
  4. Stuff your potatoes: bacon, sour cream, salsa, green onions and hot sauce are a few of my personal favs.

Potatoes are incredibly versatile. Their naturally creamy and starchy interior allows them to be stuffed with an endless variety of ingredients whether loaded with veggies or your favourite protein. Baked, mashed or fried, potatoes are the perfect ingredient to complement nearly any dish, and these Taco Stuffed Baked Potatoes are no exception.

  • Russet potatoes: yellow potatoes also work.
  • Ground beef: you can substitute for ground sausage or chicken.
  • Taco seasoning
  • Chili powder: if you don’t want the added heat, simply leave this out.
  • Sharp cheddar: other cheeses that work well are: mozzarella, havarti and marble.
  • Bacon
  • Sour cream: or plain greek yogurt.
  • Salsa
  • Green onions
  • Hot sauce: if you want the added heat.

Taco Stuffed Baked Potatoes

Taco Stuffed Baked Potatoes: loaded with spicy ground beef, sharp cheddar and topped with bacon, sour cream and salsa.
Prep: 10 minutes
Cook: 45 minutes
Servings: 4 people

Ingredients 

  • 4 large russet potatoes, washed, scrubbed and dried
  • 1 lb ground beef
  • 1/4 cup taco seasoning
  • 1/2 tsp chili powder
  • 1/4 cup warm water
  • 1/2 cup sharp cheddar cheese, shredded, plus more for topping
  • crumbled bacon
  • green onions
  • sour cream
  • salsa
  • hot sauce

Instructions 

  • Preheat your oven to 425 degrees.
    Scrub potatoes, pat to dry, and prick with a fork several times.
    Wrap with foil individually and bake for 45 to 60 minutes, or until soft.
  • Meanwhile, cook the ground beef on medium/high heat.
    Break it into small pieces with a wooden spoon as it cooks.
  • Add the taco seasoning, chili powder, warm water and continue cooking for an additional 1-2 minutes on medium heat.
  • Add the cheese and mix to combine.
  • Turn the heat off and set mixture aside.
  • Gently slice open the potatoes lengthwise (don't slice all the way, you want the potato to stay intact), and season with salt and pepper.
  • Top potatoes with the ground beef mixture, more cheese, bacon, green onion, sour cream, salsa and hot sauce.
  • Serve right away!
